Chapter 1 is the first release in this collective, and is a collaboration with Somerset’s masters of flavour and fermentation, The Wild Beer Company.

We set out to brew a truly unique fusion of Gueuze-inspired sour ale that breathed the freshness and balance famous in our Bacchus and Chardonnay wines from Chapel Down. The end result is a wild fermented sour ale, barrel aged with Bacchus and Chardonnay wine yeast to create a complex beer that will confound expectations. The wild sour ale’s fresh acidity is balanced by the smooth characteristic of English wine to give intense aromas of citrus and toasted nuts with a hint of vanilla.

27th July 2020; Shrewsbury Monthly Share in Chez Sophie (five of us). 0.75 litre bottle, misty light yellow in colour with a weak, thin white head. It's a Sour Puss.

75cl bottle @ monthly tasting, Chez Sophie, July 20. Thanks Mark for this! Misty yellow appearance, sparse white bubbles atop. Wild funk nose. Taste is wild, acetic, tangy with good white wine influence, fine carbonation. Interesting wild fermented character with welcome vinous tones.

75cl bottle. Pale golden with a light haze, no head. Aroma is vinous, sharp citrus, funk, apple, oak. Taste of sharp citrus fruit, quite acidic, lemon, vinous, oak, apple, light funky barnyard, sour, tart, dry finish. Medium body and carbonation. Pretty decent sour.
