Made by James & Susanna Forbes; using Foxwhelp and Ellis Bitter apples, & showcasing them in fascinating ways. Art of Darkness is their annual experiment with extended barrel maturation & the AOD 2017 takes this a step further, giving you an insight into the makers method, with the release of three separate expressions:
PART 2 is 75% Ellis Bitter, & 25% Foxwhelp
Free from the tyranny of Foxwhelp, Ellis Bitter sets about establishing a hedonistic, empire of plenty! Doing what it does best, Ellis absorbs the full influences of the barrel it spent 22 months in. Its rich depth of red fruits, black leaf tea, dried flowers, leather & beguiling violet perfume in the mouth, shows off the variety and its potential to the max. Alc. 7.2% vol.

Sample thanks to danlo. Clear deep gold appearance. Less foxwhelp here so much more forgiving on the palate, presenting a generally quite dry, herbal feel with black tea tannic hints and lacking in a full fruity character, though distant toffee glimpses emerge.

23/6/2020. Sample courtesy of danlo, cheers Ed! Pours clear pale golden amber with minimal head. Aroma is mellow apple, light caramel and vanilla, touch of funk and leather. Moderate sweetness and medium tartness. Dry and tart finish.

750ml bottle from Little Pomona. Golden amber colour, no head and aroma of tangy apple, funk, earthy, wood barrel. Taste is sweetish, tangy apple, sourish, woody, leather, caramel with citric notes and soft tannin. Medium bodied, low carbonation, dry mellow tart finish. Very drinkable.
