A mixed fermentation Saison. A lightly hopped golden ale was primary fermented with saison yeast before blending with the Pastore mother culture of wild yeasts and microbes for two months secondary in stainless steel.

Citrus, hay, light stone fruit acidity, dry finish.

Sample thanks to Grumbo: Poured a golden with a white colored bubble head. Aroma is funky, pungent, straw, barnyard, yeast. Taste is tart grainy, light fruit, citrusy, sourness, very interesting.

375ml bottle. Funky, citrusy and vinous with some grapes, apricots, farmyard, hints of tartness and floral notes. Quite soft and smooth but still pretty complex funky saison. Surprisingly good. --- Beer merged from original tick of Wild Saison (2019) on 29 Aug 2020 at 19:17 - Score: 8

Bottle at home in Hackney - sourced from the Trembling Madness online. Pours almost entirely clear, honey-gold, with a foamy white head that settles into a cream. Excellent beer, lightly sweet, with moderate tartness, some citric bite, mellow funk, straw, salt, lemon. Light bodied with moderate, massaging carbonation. Clean finish, fairly dry, with quenching acidity, more lemony tartness. Exceptional.

Bottle from RAD beer. Opaque golden colour with a slim with head. Slight citrus apple aroma with earthy yeast. Taste tart to sour. Crisp slight dry to tart.

375ml bottle. Misty gold appearance, thin pure white head. Lovely barnyard funk on the nose, fruity, floral, yeasty. Taste builds on this more, noticeably sweet, soft on the palate with a very low bitterness. Nice wild character.

17/01/2020. KeyKeg at the 11th Elysian Winter Beer Festival. Pours slightly hazy gold with an orange tint and a small white head. Aroma of citrus, hops, straw, yeast and grass. Moderate sweetness, light bitterness, medium to heavy sour. Moderate body, slight oily texture, average carbonation. Decent.
