This project is brewed as an English Old Ale, aged in Burgundy Red Wine and Bourbon Barrels separately, then blended to become Modus Operandi - a mix from barrels across several ages and vintages.
To go “Beyond Modus” for this year we have added locally grown grape juice into an exceptional blend of Modus Operandi and aged in some spectacular barrels.
For the 2019 blend, we added in a barrel of 3 year old Barley Wine and grape juice from the Triomphe d’Alsace black grape variety which were grown locally by Mulberry Vale Winery. We aged this blend in Pedro Ximenez Sherry, Burgundy Red Wine and Bourbon Barrels to help create the levels of tannin and oaky vanilla notes we desire.

Bottle shared at work. Pours copper with a burgundy hue and no head. Nose is fruit stones, light acetic acid, malty sweetness, restrained booze, some funk. Taste is light sweetness of the malts and booze, bourbon notes, a spicy woody touch, moderate tartness,sour cherries, funk. Closes with tart finish, has medium body and average carbo. Tasty but I expected more complexity.

Bottle. Color: Dark reddish brown, large frothy yellow-ish beige head. Aroma: Tart, dark fruit (plums) and some red fruit, vinegar, vinuous. Taste: Over moderate tart, going to medium tart at some moments. Dark fruit, red berries, Balsamico vinegar and lemon notes, wood notes, subtle sweetish caramel notes. Vinuous hints of red wine, mostly at the finish. Light bitterness and sweetness. Just over medium body, just below average carbonation. Very well balanced, nice complexity.

750ml bottle – Pours a coppery brown colour with a small beige head. The aroma is vinous, ripe red berries, light vinegar and earthy woody notes. A moderately sweet, tart and fruity taste, prunes, red wine vinegar and woody flavours with a dry sour finish. Lovely stuff.

Bottle sample at a tasting at Yoav's place. Reddish brown. Red fruits, cellar, funk, caramel, wine, oak, cobwebs, sour, a bit of apples, light lemon. Really good.

Backlog. On keg at the Hanging Bat 17/12/19. Appearance - amber/red/brown. Not much head. Nose - vinous and woody, persistent sour edge to it. Taste - more of the same. Vinous/woody sour is now balsamic vinegar. Palate - persistent depth and length at the same time. Sour, but balanced with wood and fruitiness. Overall - lovely beer.

75cl bottle @ monthly beer share, Chez Sophie, FEB 20. Pours a hazed ruby, small off-white head. Pleasant balsamic and fruity notes on the nose. Nutty balsamic flanders cherry character, very good deep developing complex flavours, gentle acidity, some earthy, woody moments. Fantastic.

Keg at the hanging bat. Pours deep ruby, nose is raspberry, funk, vinegar, oak, taste is juicy fruit, funky, tart, chewy.

Draft. A dark brown beer with a lazing brown head. The aroma has notes of roasted malt, alcohol, and prunes. The flavor is sweet with notes of prunes, wood, alcohol, malt, caramel, and funk, leading to a tart finish. A bit too strong for my taste.
