Once you’ve completed the original Augment trio, where do you go next? To the brewer’s favourite of course! A beer that was birthed from a collaborative effort with our pals at North Brewing Co last year, and an in house favourite amongst the brewers and office alike, we’ve amplified this beer to the nines for our final TIPA of the year. Going with a 10min whirlpool addition of Mosaic at 80 degrees, we opted for slightly more bitterness in this beer to counteract the sweetness from the residual sugar on the mash. Backed up with our biggest employment of our “pyramid” technique yet, with 25kg of Mosaic, followed up with smaller 15kg and 10kg additions of Galaxy and Simcoe respectively, the motto here at Polly’s is to never stop improving, and with DDH Pines, we’ve jumped a level once again.

Can, 10%. Hazy yellow with small white head. Aroma is malt, fruit, hop, citrus, tropical fruit, little pineapple and pine. Flavour is malt, fruit, hop, citrus, sweet, tropical fruit, little pineapple, fruit peel and a little bitter.

Can from Beer Ambleside. Appearance - murky yellow with a snow white head. Nose - gooseberry and greengage. Green apple and kiwi. Taste - gooseberry and ripe green apple. Palate - light to medium bodied. Dry, tangy and lightly bitter finish. Overall - .very nice.

440ml can. Pours murky orange golden with a white cap. Aroma: intensely juicy, mango, tropical fruits, pine. Taste: moderate sweet & light to moderate bitter, pineapple, mango, tropical fruit, pine. Medium to full body with tight carbonation. Super smooth, no hop burn. Dangerously drinkable for the lofty ABV. Great stuff

Can picked up from Kihoskh and shared at home (31/12/2020) - hazed up golden orange with a white head. Intense juicy fruity hits delivered with grapefruit, nectarine, pineapple, mango, pine needles, sweet malts, soft smooth substantial mouthfeel and body, piney hoppy finish. Slips down so easy below the quoted 10% abv, gorgeous.

440ml can. Murky golden, small white head. Aroma of tropical fruits, mango, pine. Taste is slightly sweet, tropical, mango, pineapple, pine, low bitterness. Full bodied, thick, smooth. No alcohol, no hop burn, this is their best TIPA yet by a long shot. Outstanding.
