Spiritous aroma with a joyful whisky zing

A lightly sparkling cider, made from 100% Gilly bittersharp apples – a hybrid apple created at the Long Ashton Research Station in the 1990s.

We have collaborated with The Ciderologist and Circumstance Distillery, maturing our Gilly cider for 9 months in Circumstance’s 200L Oak Barrel, previously used to age their first release of Circumstantial Rye 1:2:1:5:9.

Sample thanks to danlo. Pours a misty yellow, with a persistent ring atop. Aroma has gentle whisky. Taste has a welcome whisky vanilla glow that surrounds a pleasant medium dry blend. Moderate spritz. Very good.

Sample thanks to Danlo: Poured an unclear white yellow with a white bubble head. Aroma is apple fruit, tannins. Taste is boozy, whisky, sticks to apple, somewhat dry leather finish.

30/1/2021. Bottle sample courtesy of danlo, cheers Ed! Annoyingly RateBeer glitched as I pressed save so the first write up was lost. Second attempt. It poured clear golden with a small frothy white head. Nice aroma, sweet, woody, whisky, leather, toffee, pastry. Medium plus sweetness and light tartness. Moderate body. Drying tannic sweet and tart mix to finish. Liked it.

750ml bottle from Scrattings. Bottle 43/208. Hazy yellow golden colour, white foam head that dissipates to a thin rim and aroma of whisky, apple, caramel. Taste is mellow, apple, fruity, tangy with some woody oak, vanilla, hint of rye, and whisky notes. Medium bodied, light carbonation, medium-dry finish. Nicely drinkable.
