We’ve borrowed the term col fondo from our Italian friends for this, our third experiment with the ever amazing Egremont Russet apple. Fermented in both tank and barrel we combined the dry ciders into bottle for a second fermentation, ageing it on the lees and leaving it undisgorged.

On the nose there's Russet apples along with honeydew melon and blossom. It’s a lovely green tinged, slightly hazy yellow colour. In the mouth it has a pillowy sparkle, flavours of kiwi and lime zest and that characteristic spice and slight tanginess of the col fondo method.

Drink this cold but not frozen, as a beautiful, versatile match with all manner of seafood dishes. It’s also pretty perfect across a cheese board.

Gluten free. Vegan friendly. No added Sulphites

Panda at home, thanks to Fergus, 08/01/23. Pale, faded, almost translucent yellow with little in the way of a head. Nose is apple pie, vanilla custard, sugars, leafy, apple skins. Taste comprises bitter sweet apple, apple core, light acidic scrape, hay bale, lemon zest, green apple tang, vinous. Medium bodied, fine carbonation, drying close with a roof of the mouth tang. Solid.

Bottle at home picked up from HOTM i think. A light hazed yellow petrol coloured pour with a fine white head. Aroma is semi sweet, and tart, floury apple, tangy pear, wheat, lemon squeeze. Flavour is composed of tart and tangy green apple, floury, prickly, lemon rind to drying finish. Palate is tangy, mild pucker, spritzy carbonation. Lingering light funk. Good depth.

Sample thanks to danlo. Misty yellow appearance, aroma has pale apple, vanilla, flora. Taste has a light spritz, extremely dry with crisp crunchy apple flesh, soft tannin, and a certain underripe bitterness. Interesting dry cider.

Sample thanks to Danlo: Poured a white yellow with white head. Aroma is fruity apples, some woodsy. Taste is woodsy, fruity, apple, tannin.

30/1/2021. Bottle sample courtesy of danlo, cheers Ed! Pours hazy pale gold with a small white head. Aroma of vanilla, wood, sweet herbs, flowers, yeast. Moderate sweetness with sharp tangy bitter tart notes. Medium body, average carbonation. Dry finish. Flavoursome and enjoyable.

750ml bottle from Little Pomona. Rating #7000. Hazy yellow colour, short-lived white foam head and aroma of fruity apple, with hints of wood and white wine. Taste is slightly tart, tangy, woody, fruity, apple, some vanilla, oak, with alittle green apple and citric, white wine notes. Medium bodied, light carbonation, mellow dry finish with lingering oak & vanilla. Very drinkable.
