Bermondsey, our home, has been a hub of trading in London for centuries, merchants from all corners of the world would dock in East London, after arduous months sailing the seas, their precious cargo: barrels of foreign and exotic spirits, destined for the demanding taste of the people in Britain. Now laying in unit 90 druid street, we are ageing our cider in ex-spirit barrels and just like the merchants before us, will not open the barrels until they are at their very best.

The first in the series, Kentucky Bourbon Barrel-aged cider, is a graceful bluegrass tribute. This Herefordshire cider apple and east county dessert apple blend is aged for 6 months in ex-Bourbon Barrels from one of the masters of American whiskey. It’s the time in the oak imparted an emblematic vanilla note that is truly curious in a cider. Lashings of tannins counteract this flavour in a bittersweet showdown at the finish.

On tap at BrewDog Outpost Tower Hill, pours a clear pale golden, almost no head. Nose brings out dry apple skins and plenty of bourbon barrels in good cohesion. Flavour is very dry, with lots of dry apple skins, bourbon and gentle farmhouse funk. Big, balanced and robust—excellently barrel aged. Real nice.

Sample thanks to Cloin: Poured a coppery clear with white bubbles. Aroma is vanilla, boozy, apples. Taste is bourbon bite, vanilla, apples, caramel.

Bottle at home picked up from Brewdog online. A clear golden orange coloured pour with a fading loose off white head. Aroma is semi sweet, toffee, woody oak notes, caramel, vanilla, tangy apple, Some mouldy funk notes. Flavour is composed of semi sweet, and tangy green apple, oaky vanilla, spicy wood, some boozy bourbon notes woody apple. Palate is semi sweet, woody tannin, moderate prickly carbonation. Interesting. Barrel character is pretty strong.

Bottle at home, from an online peddler, 02/01/21. Clear golden amber with a good sized white cap for a cidre that soon dissipates but lives on as edgeing. Nose is sweet apple pulp, oak, light bourbon nip, dried fruits esters, hint of sherry. Taste comprises crisp apple, caramel crisp, sugars, mellow barrel, vinous twang. Medium bodied with a little bite, fine carbonation, light drying close with a balanced bourbon kiss and a touch of booze. Not bad.

Bottle at ash's. Pours clear golden, nose is sweet toffee, apple, burnt wood, caramel, taste is sweet apple, chewy oak, winter spices, fudge.

Bottle. Pours clear golden with a short-lived thin white head. Aromas of wood spice, apple. Taste is sweet, vanilla and spiced apple cake. Good body.

Bottle thanks to Stuu666. Appearance - bright yellow and oily in texture. Nose - sweet apple and some wood spice, maybe clove or cinnamon. Taste - stewed apple and light nutmeg or cinnamon note. Woody at the back. Palate - close to medium bodied. Sweet in the middle. Dryish tang on the finish. Overall - interesting and quite good.

500ml bottle from Brewdog online. Orangey golden colour, short-lived white foam head and aroma of wood barrel, oak, vanilla, kentucky bourbon notes. Taste is sweetish, mellow apple, vanilla, formic acid, woody, bourbon, and some soft tannins. Medium bodied, soft carbonation, dry oaky finish. Nicely drinkable.
