Winter ale inspired by a Buche de Noël! Brewed with Vienna malt for a lightly sweet and nutty body, oats for a creamy mouthfeel, rye for a touch of spiciness, lactose for the milky side, Madagascar vanilla for the dessert aroma, cacao nibs for the chocolate touch and last but not least, a lot of home roasted pecan nuts... because we love it!!

18 December 2021. 6th Anniversary and Christmas Beer Evening with the lovely Anke!

Bottle from Geers. Hazy dark golden, thin, off-white head. Aroma of candied apricot, plum jam, pineapple, vanilla cream, biscuit, white chocolate. Taste has sweet apricot & plum in a biscuity, jam-like, sugary, bit creamy malt body; vaguely nutty. Floral hoppy finish with vanilla, white chocolate, candied yellow fruits and warming white rum-like alcohol. Medium body, slick texture, average carbonation. Oddly executed; it's as if the style can't render all those ingredients.

28/XII/21 - 33cl bottle from DOK Brewing Company (Gent), shared @ home, BB: XII/2023, lot: 044/20 bottled: 29/X/20 (2021-1620)

Clear orange beer, huge creamy off-white to yellow head, stable, adhesive, leaving some lacing in the glass. Aroma: weird, green coffee, green bell peppers and green peppercorns, pretty bad. Can we stop with that whole “white stout” thing all right? It’s just a gimmick and a bad one for that matter… MF: ok carbon, medium to full body. Taste: pretty sweet start, lots of alcohol, coffee notes, sugary, hint of vanilla, some green bell peppers. Aftertaste: little bitter, some coffee, little sweet, quite some alcohol, more alcohol, meh.

Trocken kräutriger Beginn. Etwas Roggen, zu süß, Anis. Gewürzig, die SÜße bleibt konstant, mittellanger Abgang. Naja... 8/7/6/6/7/7

33cl bottle. A hazy dark golden beer with a small white head. Aroma of vanilla, coffee, strong malt. Taste of intense coffee, vanilla, caramel, chocolate.

Bouteille 33cl, BB 12/2023, lot# 044/20.
Dorée virant sur léger ambre, col fin blanc.
Arôme au bouquet plaisant avec de fines effluves marquant bien les notes de chocolaté et une pointe de pecan en rétro-nasal. Une douceur de lactose arrive en retrait et s'accompagne d'une pointe de vanille.
Palais est sur une base un peu bière hivernale belge avec une belle douceur de lactose et vanille en retrait. Cela s'accompagne par une note levure qui confère une pointe ester belge et une amertume des houblons plutôt nobles. Petite touche épicée et complète au niveau des grains - effet seigle.
