DB Pink Juice is a Sour-mashed Saison, fermented with pink guava. This kettle sour is a collab with brewpub Blackstar Co-op from Houston, Texas. Highly acidified with the malt bacteria. After this acidification, we boiled the brew and let it fall to a pH of 3.5. After adding Cascade hops and Blackstar’s American home yeast, let it ferment for 5 days and then add bins of pink guava and our own Saison yeast. The result is this super hazy sour guava ale.

pours clear blonde, medium sized, rather unstable white head. Smell is tart, earthy and vegetal, mild saison style phenols. Taste is sharp, lactic acid, guava ( i guess , something herbal, mildly earhty i'm not that fammiliar with ) . mild soapyness ( to me, its probably just the guava ) . Tartness dissapears immidiatly. high carbonation, rather thin mouthfeel.

Bottle. Blonde, hazy. Pink grapefruit and lychee in the aroma. Floral sweet, very fruity flavor. Just some tartness next to the sweetness. Decent.

Pretty cloudy blond to beige beer, small creamy off-white head, unstable, non adhesive. Aroma: oxidizes, some banana peel, fruity, must be the guava I guess. MF: very lively carbon, medium to light body. Taste: pretty sourish, lemony, fruity, lots of lactobacillus. Aftertaste: soft bitterness, lemon peel, bitter, sourish, fruity touch.

Hazy golden colour, white head. Fruity aroma, yoghurt. Sour flavour, sour guave. Finish sweetened yoghurt.

Bottle at THT aaaarrrrggghhhhh. Hazy golden with small white head. Rotten rhubarb, sulphur, dry wheat, spicy yeast, red currants, light grassy, quite mineral and earthy. Medium sweet and bitter, light tart. Almost medium bodied.
