We love to link our beers here at Polly’s, and 58bpm is a continuation of this trend. A distant cousin of our insanely popular Circadian Rhythm; which in itself was named for the brewer’s disturbed sleep patterns from their 7am to 8pm work days. 58bpm is a reference to the metronome used by Matt to get a decent night’s sleep after a long day at the brew kit. An almost identical hop bill to Circadian Rhythm of Citra, Simcoe, Mosaic and this time Azacca, albeit this time charged up to 40kg in the dry hop; this is a DIPA of insane flavour intensity – expect stone fruits, mango, pineapple and just a hint of grapefruit throughout.

Can 2024 Azacca, Citra, Mosaic , Simcoe, 8%. Hazy dark yellow with small off-white head. Aroma is malt, fruit, hop, citrus, earthy and herbal. Flavour is malt, fruit, hop, citrus, herbal, grass, pine, earthy and medium bitter.

440ml can bought at Vinmonopolet Langnes. A firm white head over an opaque golden body. Upper part lacing. Promising aromas of pineapple and mild malty sweetness. Quite succulent hop fruity taste character of orange, pineapple, and peaches. Rounded bittersweet fruity ending, lingering. Refreshing in the sunshine outside at the balcony. (Tromsø 13.06.2020).

7-3-7-4-15 Can, seven months before bbd. Pours cloudy pale yellow, with a creamy head. Aroma is grassy hops with tropical notes of pineapples and litchi, as well as citrusy notes and minerals. Full body, with soft carbonation. Flavour is dank hops with tropical notes of passion fruit, pineapples and mango, as well as citrusy notes with marmalade and minerals. Finishes off with slightly bitter dank hops with marmalade and minerals.

Can. Hazy gold beer, good bubbly pale cream colour head. Airy palate, mildly dry, decent fine carbonation. Light malts, perhaps a little thin but delivering a pleasant medium sweetness. Slightly tangy but reasonably bright citric hops with a good dose of cooling pine. A nice touch of tropical fruits comes in on the backend. Light pine and a very light nibbly hop spice. Slightly thin and dry finish. Wasn't too sure about this at first, was it doing enough with this hop profile? Well it delivers a nice broad hop profile without ever crystallising the character of any one of them. A tad thin but drinks well and drinks easy.

Can from Brew Cavern in lockdown at home. Cloudy pale yellow colour with a thick white head. Aroma has papaya and melon with a nice citrus kick. Taste sweet to moderately bitter. Full smooth body.
