The barrel stock we tasted through to choose the 2019 BBT blend is the exact same stock that we pull from for the Derivations and all of our stouts. We have brewed 15 different stout recipes, aged them in a variety of barrels, and then always thoughtfully selected and blended to achieve our goals, whether it be Beer : Barrel : Time, a new blend of Derivation or the Barrel-Aged Stouts by Shared Brewing.

O.W.K. recipe aged in Willett Bourbon barrels for 21 months

O.W.K. recipe aged in Eagle Rare barrels for 21 months

Derivation Blend #3 recipe aged in Knob Creek barrels for 22 months

Derivation Blend #3 recipe aged in Knob Creek barrels for 28 months

Derivation Blend #2 recipe aged in Willett Bourbon barrels for 20 months

Thick, syrupy, sweetish, boozy. Malty, chocolate and bourbon, vanilla from the barrel, rich and smooth. Delicious.

Complex, slightly roasty and intense barrel heavy chocolate sauce, some vanilla, oaky wood, thicc body and cocoa. Great stuff.

750mL bottle drunk 1/16/25.
Clear, dark, little head.
A bit less char and spice than the 2020 I just had. Fruitier, softer, a shade more oxidation. Maybe a bit more approachable if maybe a little less stupendously spicy-bourbon-rich. No booze. Good balance without any big sugar or huge fudge. Lots of pepper, moderate roast, light vanilla-like barrel notes.
Soft, juicy, with plum and big spice. Syrupiness almost completely gone from the texture yet still it's full bodied and with good attenuation. Sweet but attenuated. Comforting, mellow, with low but still appropriate carbonation. No alcohol. Elegant. Soft spice lingering.

Bottle pour at Side Project Cellar. Black with brownish head. Intensive chocolate, vanilla, bourbon. Deep, complex and smooth. Exquisite. Nothing missing here.

Bottle shared at the Chania New Year’s Whale Share, 2022. Black with barely any ring brown head. Aroma of big woody oak barrel upfront with dark chocolate, fudge, caramel, tobacco notes, bourbon, vanilla, light coconut. Flavour is heavy sweet. Full bodied with a thick texture, alcohol warmth and soft carbonation.

Bottle at the brewery. Pours black with small tan head that lasts. The aroma is strong bourbon, molasses, chocolate, roast, wood, vanilla. Slick body, similar flavors to nose, nice sweetness, boozy, enjoyed this.

Bottle shared at the Beau in London tasting, last group tasting for 7 months - who knew,big thanks to Beau 11/03/20. Black with a good sized tan head. Nose is sweet malts, rich chocolate melt, coffee, dried fruits, bourbon stained oak, brown sugar melt. Taste comprises decadent chocolate, spice, molasses, bourbon, vanilla, oak, sweet malts, mellow roast. Full bodied, fine carbonation, semi drying close with a balanced kiss of booze. Solid indulgent impy stoot.
