Dopo la macerazione a contatto con le bucce, si attende la completa fermentazione che avviene con i lieviti indigeni dell’uva, la birra viene poi sfecciata ma non filtrata. Messa in bottiglia, rifermenta per 6 mesi.
La birra è limpida di colore giallo paglierino carico, il naso bene equilibrato tra bretta e sentori di frutta come ananas, pesca gialla che rimandano al vitigno. L’acidità è spiccata, apportata anche dagli acidi contenuti nell’uva. Ben bilanciata con volatile appena accennata e con morbidezza derivante dal glicerolo prodotto dai lieviti dell’uva in fermentazione secondaria.

Bottle from Les Vignerons. Funky nose, grapes, brett, hay. Tart and bretty flavor with grapes, grapefuit. Acidity is well handled. soft, silky and a bit lactic. Great.

Bottle. Hazy golden color with white head. Aroma is lots of white grapes, white pepper, light apricots. Taste is white grapes, white pepper, light apricots, very nicely balanced. Silky mouthfeel with medium carbonation. Fabulous, very tempting!

Bottle. Milky yellow, wild tart, gueze like, medium light, grape sweetness, funk, good balance to juiciness, very neat.

Hazy dark yellow, light head. Spicy vegetable aroma. Flavor is much stronger than the mild aroma! Wow, very complex with a really interesting dry white wine tinge from the grape addition. Perfectly balanced.

Cloudy golden/yellow. Aroma is basil, mint, some berries, grapes and juice. Taste is grapes, white wine, mint. Interesting. Balanced.
