A blend of 9 different (grape) pomaces and 2-year-old Lambic.
Before being blended with the Lambic, the grapes underwent a 9 months pellicilar maceration.

0,75l from bottle at the brewery. Bottled 19.08.2020. Yellow clear color, small white head. Smells grapes, tannins, spices, peaches, parfumy, lovely smell. Full body, soft carbonation. Tastes citric, grassy, tannins, white grapes, bit lactic, bit peppery. Finishes dry and light to medium sour with notes of white grapes, peppery and grassy notes. Lovely, bit on the sour side, but overall lovely

Bottle at Cantillon. Pours a cloudy gold with medium white head that lasts. The aroma is strong white grape, citrus, oak, funk, floral. Medium body, grape, light funk, oak, mineral, vinous, enjoyed this.

Cantillon pioneered grape lambic in the seventies (based on old sources mentioning it in the 19th century) and has remained the most accomplished specialist in the field, with many of their new products varying more or less on this theme, but always with surprising results. This one combines no less than nine different Italian grape varieties in two year old lambic. Bottle at Cantillon. Moussy, snow white, opening head, dissolving completely over an initially lightly misty, warm ‘old golden’ robe, turning deeper misty with sediment. Lovely ‘grapey’ bouquet of white grape juice, Verdicchio and Orvieto wine, grape skin, green apple, dusty attic and even sawdust, pear, gooseberry, minerals, some light sweaty funk. Filled to the brim with refined ‘white’ grape juiciness, even with a sweet core initially but also this light lemony edge, vinous from the start; minerally undertone, hints of unripe pineapple, green pear and unripe peach. Supple body with a bready core supporting this entire fruit structure, with lactic tartness remaining mellow, drying in the background without disturbing that delicate play of grape juiciness and sweetness, grape skin wryness and grape seed tannins; a dusty aspect appears in the end along with a mild background funkiness, but vinosity and joyful, delicate, almost ‘feminine’ fruitiness remain the core business here. One of the most elegant grape lambics I ever had – as if the most delicate of lambics married the most refined of Italian grape ales. Very white wine-like, too: if this does not pull white wine drinkers over to the lambic side, then I don’t know what will.

Clear pale blond to yellow beer, no head. Aroma: very fruity, juicy, lovely stuff, sweet notes, some cinnamon, spicy, lovely! MF: ok carbon, medium body. Taste: pretty sweet and sugary, grapes, gentle acidity, lemony, little bitter. Aftertaste: bit oxidized, lots of grapes, bit sweet, some tannins, peppery, nice one!

Bottle, 750 ml at Cantillon. Shared with Miro B and Miro. Cloudy golden with minimal white head. Grapes, quite juicy, vinous, quite sour, bit sharp on finish. Soft, smooth texture.

Bottle. Rather clear golden color with small white head. Aroma is super juicy white grapes, almost bubblegum, a bit buttery. Taste is soft juicy white grapes, on the exotic side, woody and leathery towards the back, but overall really pleasant. Oily mouthfeel with fine-bubbled carbonation. Very interesting!

Pours slightly hazed blonde, no real head. Scent is full, white wine aspect, fairly creamy, mild funk and acetic acid. Taste is full, tart, acetic (yet balanced) . Dry, very expressive. less than usual cantillon funk, but more so than the trousseau . intense tart, full fruity. A very nice blend.
