Two years ago, we set out to recreate Derivation Blend #3, but with twists from what we have learned over the years (we rarely leave any recipe alone and always make tweaks). We threw the Derivation Blend #3 recipe (however without its touch of rye malt this time) and the OWK recipe (no vanilla beans) into Willett Rye and Still630 Rye barrels for 2 years before blending. The result is exactly what we had set out to produce and we are honored it is worthy of the Beer : Barrel : Time name.

We are excited that we could blend up this beer for you - to express our barrel-aging program from a slightly different angle and to offer up BBT more than once this year! BBT Rye will not be a yearly thing, this first batch was technically an experiment, so we do not have enough barrels filled to do this again next year, but we have started filling some extra rye barrels here and there, so hopefully we can see it again in 2022.

pitch black color. No head. Tons of rye up front, big oak, iodine, very dry roasted malt and dark chocolate. The palate is just not quit there. But amazing rye , dark chocolate, oak, very drinkable for the Abv but not amazing depth. Tons of alcohol. It’s really good but can’t say I love it.

Bottle shared at the Chania New Year’s Whale Share, 2022. Black with barely any ring brown head. Aroma of big rye whiskey, oak, vanilla, chocolate, fudge, caramel. Flavour is heavy sweet. Full bodied with a fairly thick texture, alcohol warmth and soft carbonation.

Thnx to Tom VVH ! 2020 edition (Batch one, currently the only one released) . Pours black, small , nearly no head. Very tanned formation of bubbles, though. Scent is milder, more silky than regular BBT (B4 in this side by side) . Taste is full, roasty, fullbodied. More 'dry' than the regular version. very nice as well, I might even prefer the actual taste here, though I enjoy the balance of the regular more. Ergo, same score for both.

750ml bottle side by side with batch 2. Pours out black topped with a small tan head. Nose is nice big rye notes rich chocolate barrel vanilla light booze. Taste is more of the nice sweet chocolate roast coffee wow very well balanced.

Bottle. Pours black with small tan head that lasts. The aroma is strong bourbon, rye, wood, vanilla, roast, licorice. Slick body, chewy roast, dark chocolate, rye bourbon, oak, nice sweetness, enjoyed this.
