541 million years ago, the Cambrian Explosion saw a radiation of complex marine species, from which life evolved as we know it today. Our Cambrian Series is where our experiments, one-offs and collaborations explode into being. Where ideas come to life as beer, no matter how short-lived.
Smelt is a balanced and light spelt saison with a hint of lemon and some ripe mango funk from the Funk Weapon yeast culture.

Foam comes gushing out of the bottle. Golden colour with floating sediment. Big dense white head that keeps growing. Aroma's: brett, funk. Retronasal it's a bit more mellow, with light bitterness. Flavour is light bitter, funky. Light bodied, high carbonation, foaming in the mouth. Moderate bitter finish. As expected, not really my thing.

Bottle. Drunk on room temperature. Color: Hazy golden, large frothy white head. Very little particals floating around when pouring. Aroma: A lot of horse stable funk, malty, light fruity hints of stone fruit. Taste: Malty body, wheat malt, subtle fruity notes of apricot and mango, very strong horse blanket wild yeast funk. Spicy hints. A lot of flavour, body and complexity for such a low alcoholic beer. Just over medium body, just below average carbonation. Light to moderate sweetness, moderate to over moderate bitterness. Long lasting dry and funky finish. Very nice, but I'm a funk lover.

Gushed a little. Been in the backpack. Smells a bit catpissy but tastes good. Hazy golden with white head. Brett, white bread, tangerine, citrus, a little, bitter yeasties. Soft and fluffy. Medium body & strong carb. Very tasty light funky table friend.

Bottle shared, bit of a gusher. Hazy golden with big fluffy white head. Dry wheat, smells like stinky Brett but not rhat much funk in the taste. There's some spicy yeast, more raw wheat, dry pineapple. Light sweer and bitter. Over light bodied, medium dry. Nice.

330ml bottle. Cloudy, orangey golden colour with some tiny floaters and a huge, frothy, slowly osteoporosing, minimally lacing, white head. Funky, herbal, yeasty spicy aroma, spicy malty background, hints of mustard seed, dill, brine. Taste is slightly watery, dry, mildly funky, herbal, diluted hints of mustard seed, dill, quasi no residual sweetness, minimally grainy, bready, spelty, malty basis. Watery texture, dry palate, medium, mildly prickly carbonation. Nice dirty flavours, a bit watery - nice.

37.5cl fles van De Laat. Mistig gouden kleur, witte kraag. Redelijk zoet, kruidig, Brett funk komt meer naar voren als t bier wat opwarmt, redelijk droog, licht bitter. Lichte body. Iets teveel van de zoet-kruidige saisongist, verder prima en verrassend veel body voor 3.5%.
