The beer is cast away to fermentation where it meets our house bavarian lager yeast. We ferment this as low as possible for a long slow fermentation that yields an extremely clean and crisp pils once the extended lagering process is complete. Towards the end of fermentation the beer gets spunded to achieve an elegant carbonation. Spunding is the process of closing off a fermentation tank towards the end of fermentation to trap in the CO2 produced by the remaining fermentation resulting in a beer that is naturally carbonated with fine, soft bubbles. We strive to lock in the slightest hint (barely perceptible) of sulphur character in the beer to really achieve an authentic profile that compliments the hop nose. After an extended sub zero lagering is complete which allows yeast, proteins and polyphenols to drop out the beer is packaged. The result is an unfiltered, unfined Pilsner that will pour slightly hazy when young with appealing notes of lemon and tangerine zest with plenty of classic herbal character. On the palate and true to style, a firm but fine bitterness is felt which emphasises the hop combo before gentle notes of cracker, bread and slight honey appear before a dry and hoppy finish round out the experience.

We have made a huge amount of changes in how we brew lagers down through the years and have played around with various experimental batches of Pils (more of them to come) and we are proud to bring you RIBA. A true northern German Style Pilsner. Brewing great Pils is about paying attention to all of the small details and being meticulous in process. To that extent we start with 100% reverse osmosis water to allow a water profile perfect for brewing this style. Adding in only the necessary minerals allows us to achieve the crisp and soft palate that a beer like this should have. Then we use 100% Pilsner malt from Bamberg to give gentle bready notes. Hop selection sees a trifecta of absolutely stellar German hops. Two classic noble hops; Hallertau Mittelfruh and Tettnang provide beautiful herbal, floral and slight lemon zest notes which are perfectly complimented by a more modern German variety; Saphir. A delightful hop that marries some classic noble like characteristics with zingy tangerine notes. Dorada ligeramente nebulosa. Bonita espuma blanca de buena duración. Delicado aroma a grano y ligeramente especiado. En boca carbonatación perfecta, muy refrescante. Y muy buen sabor que combina cereal y notas especiadas y ligeramente cítricas. Muy buena.

Smell of hay, faint fruit. Hazy golden colour, white head. Aroma of malt, hay, faint grass. Lightly sweet. Flat carbon. Clean.

Canned, 440 ml at Ambasada. Clear golden with small white head. Malty, grainy, some herbal notes, soft texture. Sweetish. Thin bodied.

Keg at Bishops Arms, Gustav Adolf Malmo, 18/11/22. Clear golden with a white cap that thins to a swirl. Nose is pale malts, straw, toasted grains, lemon rind. Taste comprises pale malts, herb, straw, grass, lemon zest. Medium bodied, fine carbonation, semi drying close. Decent refresher.

Tap at Ambasada. Clear pale golden body, white head. Flowery, herbal, minerally aroma. Soft, minerally taste, herbal more than flowery, light egg yolk, minerally, lightly tarr. Well, not much of a pils, but within the confines of the German one taste-wise if not body-wise.

0.33 l can from Spicy Days Webshop, Zagreb. Shared with Habas. Unclear golden, small off-white head. Clean. Grainy aroma. Light floral. Very light, a bit thin, watery. Nice soft grainy flavour. A bitter touch, moderate carbonation, light finish.

Bière 33 centilitres achetée à Bari en Italie. Robe dorée, bouche légère, on est dans les codes d'une pils, pas la pire qui soit, mais je ne suis quand même pas fan de ce genre de bière. Je passe mon tour.

Can from Væskebalancen @ Home. Pours clear golden with a white head, lacings. Aroma of malt, grain, grass, little fruit. Flavor is light bitter, malt, grainy, grassy hops. Meedium body, average carbonation, dry and light bitter finish. 240522

Can. A minimal sized white head sits on top of a lightly foggy pale golden colored body. The aroma is fruity, with grass, pine cones and a peppery touch. Some pale malts too. It’s medium bodied and quite dry on the palate, quite bitter, with a flavor more straight forward hoppy than the aroma. Pine cones, resin, grass and some peppery hints, with a light maltyness in the back. Medium length finish. Refreshing, dry and easy drinkable. Nothing special going on. 210925
