This is a re-brew of our collaboration with Casita Cerevezeria. Based on a Gotslandrika, juniper and smoke Viking beer. Mixed ferment in oak featuring Norwegian farmhouse yeast. We also added Cedar and pine. Beautiful acidity, with bright mid-pallet resiny conifers that fades to a bright clean up

Draught at MBCC, Red session. Misty red-brown body, ring to the rim of the surface. Spotty lacing. Smoked wood on the nose, earthy. Smoked malty flavours, hints of juniper and prunes. Oaky. Drying malt-fruity end. Medium bodied. Quite pleasing. (Copenhagen 12.05.2018).

Draught @ MBCC 2018. Pours slightly hazy golden with a creamy white head, light lacings. Aroma of light sourness, malt, light smoke, spice, pine, light sour fruit. Flavor is sour, malt, wood, oak, little smoke, herbs, spice, piney, sour fruit, lemon. Medium body, average carbonation, light acidic finish. 120518

As Casita Cerveceria Del Arboles. orange cloudy color, small white head. smells spices, earthy. spruce, pines, bit citric, grassy. nice smell. medium to full body, light carbonation, slick mouthfeel. tastes of pines, resin, spruce, grassy, earthy, lactic, bit peppery. finishes very very dry and lightly sour with notes of pines, spruce and some earthy notes. very unique but also rather intense not totally my thing. still very nice one though. 7, 4, 7, 3, 16

Tap. Rather clear deep amber color with white head. Aroma is smoked, ham, caramel. Taste is the same. Oily mouthfeel with medium carbonation. Super complex, super tasty!

From bottle thanks to Vasilis and Thomas!! Hazy golden orange color with white to off white head. Yeasty aroma, grassy, cat piss, tart citrusy fruity, juniper - pine, wood. Light sweet and moderate acidic taste. Medium oily body with soft carbonation

Draft. A hazy amber beer with a beige head. The aroma has notes of malt, caramel, fruit, and a bit of brett. The flavor is acidic with notes of lemons, brett, and straw, leading to a tart finsh.

Soft-toned, auburn-copper shows a very gentle haze and an off-white/beige head atop that is small, but fairly dense and showing moderate to strong retention.
Cedar is front-and-center, at least from amongst the three adjuncts here. Though even it is very tastefully done, with a spicy wood character that in no way overpowers the soft, lightly bready, well-attenuated malts. Poignant brushstrokes of juniper add a fruity-tartness, as the pine tips add zero astringency and give it a green, spicy, vegetal (the good vegetal) character. It all works well together, and in concert with the mildly-tart yeast, adding bright, fruity, lightly tart and pleasingly spicy aromatics, with a soft, mineral water-like character from Hill Farmstead. No alcohol or flaw.
Soft, spicy, fruity, but just very even for lack of a better word. Thereβs fruitiness and gentle acidity from the juniper, and the cedar adds mostly flavor (very little/no tannin) and somehow the pine adds no astringency. Easily the best treatment Iβve ever had of pine in a beer, which is not an easy ingredient to balance. Tight carbonation and a substantial body, yet nicely attenuated, with lightly bready malts, hints of caramel and light honey. Woody, spicy and lightly tart notes linger wonderfully on the end in a great balance, with a lip-smacking mint-like character in there as well.
