Méthode Traditionnelle 3 Year Blend
This blend of one-, two-, and three-year-old spontaneously fermented ales was produced in San Diego county and is inspired by the Belgian process of making traditional lambic. California-grown pilsner malt and raw, unmalted wheat create the foundation of this blend, which was inoculated solely by wild yeast and microorganisms indigenous to the Miramar area and Mt. Laguna during a Pure Lambic camping trip. Warm-aged hops added to the boil provide aromas of funk, Asian pear, and earthiness. High levels of carbonation make for a brew that practically dances on your tongue with tastes of fine cork, bready malt and gooseberry. The bright acidity upfront gives way to a smooth and refined finish that is both dry and refreshing.

Bottle shared at a tasting at troubles' place. Clear golden. Barnyard, oak, citrus, fruitiness, sour, bitterish finish, a bit of alcohol.

375 shared with Josh (thx for the beer, dude!) @ Ryan's. Bottled on 01/2022. Batch #4. Appearance: hazy golden with a white head. Aroma: there is definitely a lambic funk detected, smells a bit tart. Taste: nice body, but it's quite bitter, so probably has lots of the non-aged hops that might be used while brewing a lambic. It's also quite minerally, reminding me of 3F lambics. Overall: from the North American attempt standpoint this is really great, easily one of the best ones I've tried so far (so +0.1 point to the overall cause of that). From the original lambic standpoint, though, it is too bitter and too mineral, though, making it too intense and less balanced.

Poured from 375mL bottle (batch 4; bottled 1/2022). Hazy gold with small white head. Really nice tart funky note on the nose, dry and earthy, taste doesn't follow through, still nice notes, but a little bit thinner and watery. Dry, decent.

3 Year Blend, 2022. Batch 4. Hazy dull pale. Thin head. On the nose, earthy and lambicy character. On the palate, it's quite woody. A bit leathery, and there's a touch of aged hop, some brett. Good complexity. Well-balanced. Very tasty experiment, bringing good wildness, solid base malt, and a lot of complexity.

375 ml bottle from John, thanks man, 9/11/22. Batch #4, Bottled 1/2022. Corked and capped. First beer of the 2022 Red Zone season! Mostly clear, bright orange color, sheeting and lasting white head that leaves a lot of lace on the glass. Funk, wood, earth, and leaves. Leather and barnyard notes. Underlying fruit notes of apricot and lemon. Drinks very clean with a lower carbonation. Pretty sure this is my first Pure Project beer, and it is quite impressive. Looking forward to trying more from these folks.

On tap at Pure Project - Miramar, pours a clear bright golden with a small white head. Aroma is surprisingly similar to a gueuze, with farmhouse funk, leather and oak barrels. Flavour is dry, leathery and oaky, with intense farmhouse funk, leather, oak, and loads of funk. Not totally reminiscent of a gueuze but it's closer to that than a typical American sour. Oaky, leathery and complex. Beautiful stuff.

Draft. Batch 4. Golden beer with a whitish head. Light sour and light citrus aroma. Sour and oak flavor with citrus and light floral notes. Medium bodied. Sour and oak linger with citrus and light floral notes.

27 April 2019. At Zythos Bierfestival, bottle (11/2018) shared by Terry, an American visitor - many thanks! Hazy yellow, lasting, very thin, frothy, white head. Aroma of unripe apricot, yellow apple, yeast, sourdough, lemon, grass, cheese, a bit sweaty. Taste is medium funky sour, cheese & sourdough, wheaty & lemony edges, a bit lactic, sweetish apple & pear, bitter tones of grass, white grape & leather. Dry, tart, woody finish, lactic, lingering unripe yellow fruit. Medium body, oily texture, fizzy carbonation. Quenching, fresh and accessible ‘Geuze-like’ by this American brewery.
