Witness is a bretted Belgian pale ale drawing inspiration from the Trappist Monasteries. Combining the classic Bastonge yeast (from Orval) and then both Brettanomyces Bruxellensis and Brettanomyces Clausenii to condition this beer will be hoppy and fragrant fresh but will also age gracefully like it's traditional predecessors, building complexity in the bottle.

Golden color with white head. Aroma is floral, fresh, pale malts. Taste is the same. Jammy mouthfeel. Overall not too intense. Not excellent.

Fruchtig kräutriger Beginn, trocken bitter, leicht hefig. Alkoholische Beinoten, leicht herb, die Trockenheit bleibt aber passt zum Ende besser. Nett. 11/10/11/10//10

Taphouse tap. Golden, nice golden foam. Dry malt nose with a good grassy hop counterpoint, mild, well balanced. Pleasant citric finish.

Bottle from Cornelius. Hazy golden body with a medium white head. Low carbonation. Good lacing. Aroma of lime chutney, kiwi fruit and bubblegum. Flavour of furniture polish, pineapple, plastic and white bread. Thin to medium body with an oily texture. Light fizz. Not the cleanest fresh brett-yeasted beer I’ve tried. Might be better aged. As a side note - do Wild Beer show ’best before’ or ’brewed on’ dates on their bottles? If so, I couldn’t find it on this one.

Bottle. Beer Central, Sheffield. Hazy gold. Some suds of white. Good, fruity, clean hop, and a fruity, soapy brett character. Nice balance. Taste is soft, bready sweet. Minimal bitterness. Feels a tad soapy in the mouth. Fruity bitterness comes through at the end. Decent, but probably needs leaving a while. Not something I’m particularly good at when it comes to beer, though!

Cask @ Café Beermoth, Manchester. Blonde with a frothed head. Has a fruitiness with a light bubble-gum sweetness in both aroma and taste.
