Witness is a bretted Belgian pale ale drawing inspiration from the Trappist Monasteries. Combining the classic Bastonge yeast (from Orval) and then both Brettanomyces Bruxellensis and Brettanomyces Clausenii to condition this beer will be hoppy and fragrant fresh but will also age gracefully like it's traditional predecessors, building complexity in the bottle.

Bottlshare at Mr Smith’s pad. Thanks to Matteo. Hazy gold beer, good pale cream colour head. Palate is airy and soft, reasonable fine carbonation. Mellow brett, light savoury vibe. Soft malt cream underneath. Traces of lemon and a little sherbet. Someone said pissy, but I’m not getting that. Soft finish. Nice.

Light sweet flavour with further citrus, musty hay, rind, minerals, faint melon. Light bodied with fine to average carbonation. Pretty nice on the finish, some further funk, mild leather, grape skin, lemon peel. Solid.

33cl bottle. Clear pale pour with a thin white head with poor retention. Smells of brett, barnyard funk, citrus and tropical fruit hops. Tastes a bit funky and with obvious brett notes, alongside tropical fruit, honey and citrus. Dry and refreshing, an easy to drink beer.

Bottle from Fresh Fields, Croydon. It pours hazy golden with a medium white head. The aroma is earthy, funky, brett, apricot, funky peach, hay, dirt and barnyard. The taste is bitter, earthy, white bread, hay, straw, grass, brett, apricot, pepper and wood with a dry, earthy finish. Medium body and moderate, foamy carbonation. Decent enough, but didn’t wow me.
