This beer was one of our favourites from last year, so we had to make it again. It’s a strong imperial stout spiked with sour cherries and fermented with Belgian yeast and brettanomyces lambicus. The brett L. dries the beer out beautifully and imparts a distinct funk as well as some cherry-like esters, which we of course ramped up with the addition of sour cherries.

Draft at the anniversary party. Medium brown, some age showing here, soft body, light tartness, and cherry note. Strong, vibrant acidity. Decent stuff, especially if you like the cherry-chocolate vibe.

750mL bottle. Pours deep dark brown. Aroma has notes of espresso, chocolate, bourbon, and sour bread. Flavour also has sour bread malts, bourbon, and dark chocolate with notes of vanilla and dark cherries. Thinning sour finish and a subtle boozy warmth. Very enjoyable.

Bottle shared by pictoman. Rather thin body, med-high carbonation. Med-high roasty bitterness, med-light astringency, light sourness. This combo makes it a bit unbalanced, hard to drink. Med-high cherries, mixing with medium roasted notes. Hard to pick any single note from the dark malts though, feels overall roasty while not roasty at all. Overall good, but not great.

Bottle kindly shared by pictoman, many thanks man. Dark brown color with off-white head. Aroma of coffee, cocoa nibs, bourbon. Taste, strong bourbon, cocoa, coffee, coconut. Too much boozy. Still good.

Bottle at Weathered 2022. Dark brown with small beige head. Brett, bourbon, dark fruit, hint of chocolate. Flavours aren’t super cohesive.

750 ml bottle. Pours a dark brown with moderate head. Aromas of Brett, cherries and bready malts. Flavors follow same with a big of chocolate. Warm fruity finish which nakes up for the somewhat plain start.

750mL bottle, pours black with a small tan head. Aroma brings out light bourbon barrels, light cherries, some cocoa nibs, and plenty of bretty funk. Flavour is cohesive, with an unusual array of elements; there's plenty of wild yeast, bourbon, cocoa, sour cherries, and some funk. Assertive carbonation, with a creamy chocolatey mouthfeel. Not really my thing but it's well-made.

Jet black brown with a decent light brown head. Barrel and dark chocolate. Slightly soured raw wood and some dark chocolate. Odd and very woody.

Draught at the brewery
Black colour, creamy beige head. Aroma of spices and alcohol, and apples, aniseed. Lean, limited residual sweetness, less spices and a bit more harmonious than the base beer, some dark fruits, mild sourness. Quite good.
