To make Black Atrial, we brewed a batch of Original Black Metal Imperial Stout. After primary fermentation with English ale yeast in a stainless steel tank, we added six pounds per gallon of raspberries. We sourced the raspberries from the same farm in Washington that grows our raspberries for Atrial Rubicite. We then let the raspberries re-ferment with the beer to dryness.

Tap at Jester King Brewery, with Matthijs, 25th February 24. Pours a black beast. Aroma is mixed, tart raspberries, liquorice, roasted malts. Taste is bitter, tart, smoky, liquorice, slightly odd, but nice enough

Tip Tap draught, 6/14/23. Undetermined clarity but there's a definite purple tint to it. Tan bubbles to edge quickly. Very juicy, jammy raspberries remind of pb and j. Dark malts behind show light roast, vanilla, caramel. Nicely balanced, no aggressivity from black malt or raspberry acid. Almost round and lightly fudgey (dry) on the finish. Raspberry, cocoa, vanilla, dry fudge and a medium, well-attenuated, malty texture. Obviously not some massive pastry stout but with really nicely done flavors here. I usually hate raspberries and stouts, it's often just powdery, dry, thin cocoa and acidic raspberry exacerbating that but it's none of that here. Could even drink a few of these.

ABV: 7.0%. Clear dark red brown colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, chocolate, dark malt, berries - raspberries. Flavor is moderate sweet and light light acidic with a average duration, dark malt, chocolate, berries - raspberries. Body is medium, texture is oily to watery, carbonation is soft. [20211023]

Pours a near black with a dark tan head from a bottle. Big raspberry aroma underneath chocolate malt, similar flavor like dark chocolate covered raspberries. Good beer.
