Some ciders are best young, other ciders benefit from ageing; by combining vintages our cider makers are able to showcase the best qualities of each. Arrested fermentation leaves natural sweetness from Yarlington, wild fermented layered tannins from 2018’s Dabinett and fresh Browns apple fermented with cultured yeast to white Burgundy method.

Sample thanks to danlo. Pours a generally clear gold with a faint mist. Aroma of pastry, soft wild hints, golden apple fruit. Taste sees appealing vanilla notes, caramel on the finish, with crunchy medium sweet apple fruit, woody moments. Natural apple fruit seems to be in the shadows whilst a wild yeast element appears to dominate. Very interesting sipper, different and characterful.

660ml bottle from Darts Farm online shop. Bright golden colour, white foam head that quickly dissipates away and aroma of fruity apple, hints of vanilla and caramel. Taste is tangy, apple, fruity, some caramel & vanilla notes, bittersweet, with light funk and earthy drying tannin. Medium bodied, light carbonation, medium dry tannic finish. Well balanced, nicely drinkable.
