Coolshipped and spontaneously fermented beer in an oak barrel for 16 months and aged further on organic local sour cherries for 12 months. In this one I am trying to capture the unique essence of one day into a beer and imprint of local terroir and layering the hand picked organic sour cherries from a local orchard. Multiple varieties of organic cherries give a really complex expression of the fruit and prolonged aging make for a deep, rich flavour. The backbone of a beer is built on local organic barley malt and raw organic spelt from the local Hare Krishna community, where they live and function in a low intervention and organic way for the last 3 decades.

Bottle @ Væskebalancen Bar. 5,3% ABV. Pours almost clear deep red with a small offwhite head. Aroma of light sourness, light malt, yeast, light wood, cherries. Flavor is sour, light bitter, little malt, yeast, light wood, sour cherries, bitter cherry stone. Medium body, average carbonation, dry, bitter and acidic finish. 211224

Poured from a bottle @ MBCC 2023 (finally adding my notes). Hazy red with small pink head. Sour cherry, mild tartness, okay.

Funky and tart with some cherry juice, hints of sourness and earthiness. Quite balanced

Red with a pink head - Tart wood and cherry aroma - Tart wood and cherry flavours - Tart cherries goes into the finish - This was nice

Bottle pour by the brewer at Winter Affair. Misty ruby-purple body with traces of a pinkish head. Light aroma, cherry, some saliva and light soft funk. Lean, light taste, though he did state it's strong for his concept of beer, minerally, lovely sour cherry profile, lightly salty, lightly tart, nicely drinkable. Not as impressive for me as the plum that preceded it, but very good!

Bottle at home. Deep red with pinkish head. Loads of cherries, pithy marzipan, some cinnamon. Highly drinkable and quite intense for the abv.

One of this Czech sour ale specialist’s fruit experiments, a genuine lambic (spontaneously fermented and coolshipped – so ignoring legal definitions) but brewed with spelt, which is not an ingredient in traditional Belgian lambic; macerated with sour cherries. Thanks Jasper for sharing. Medium sized, opening, pale pinkish, moussy head on a fiery ruby red-glowing beer. Aroma of very obvious ripe and fleshy sour cherries (‘witbuiken’ or some other old variety), cherry wine, lemon, cherry tree leaves, cinnamon, almond, sour yoghurt, red wine vinegar, blackberries. Tart onset, lots of fruit acidity mingled with lambic acids, but also containing a sweeter, softer, fleshy hint of ripe fruit (even if it is essentially sour fruit); juicy with soft carb, lemony edge, slender cereally core and vinous mouthfeel, ‘hardened’ by cherry pit tannins accentuating dryness in the finish – but this wave of generously fleshy, juicy sour cherry remains dominant. Very generously fruited, which compensates for the somewhat lower level of complexity in comparison with ‘real’ (Pajottenland) cherry lambics.
