3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time.

Bottle, very little head, murky darkish honey orange, aroma of sewer, rotten orages, minerals, a bit of honey in the back and a whiff of maltiness flavour of varnish and rotten oranges with a hint of apples and sweet spiciness, citrusy lemony medium strong sourness. Good stuff.

C: deep gold, hazy.
A: light orange, woody, funky, hay, gooseberries, bit honey, complex.
T: light sour fruity, bit lemon, woody, gooseberries, honey, peach, bit puckering, sour lactic, brett, leather, soft carbonation, nice complex even for the style, fully enjoyed.
F: no real.

Bottle at Cask Days 2018. Hazy, dark golden pour, with a huge white head. HUGE amounts of funk on this one. soft lemon, soft overall fruitiness. Bright funk, soft grass, and cereals. Just a funk bomb. The finish is more tart than sour, with a complex crescendo of light spice, lemon zest, and wet hay. Superb stuff.

750mL bottle, pours a cloudy dark orange with a small white head. Aroma has lots of fermented out honey, which comes across somewhat cardboardy, and low-level funk. Flavour has plenty of barnyard funk, a nice cardboard character from the honey, very slight sweetness, and gentle tartness. The honey certainly sets this apart from regular OG, both in the fermentation and in the residual honey character. Very nice.

2015 bottling. It's quite dark, opaque, with a thick head. That's got a really nice aroma, with a bit leathery note. It's quite acidic, with that big leathery character, and a light floral accent from the honey. The tartness and tannic note has an almost lemon tea character. One thing that the age lends to it is a certain gravitas; a heaviness to the body and depth to the character. It's a subtle touch, but appreciated because it pulls it well away from the usual oude geuze.

At Lambikodroom, Vintage 2015. Cloude orange with white head. Nice funk, cellar, leather, some honey in the back. Medium carbonation. Chewy.

Bottle. Gusher. Almost clear dark amber with dark yellow head, looks unusual and I don't remember this gushing... Otherwise this is a tasty old gueuze with dry stone fruits, deep cellar funk, earthy, strawberries, soft caramel. Medium sourz a bit less sweet. Full bodied. Really good and uniquez but it's hard to tell what the honey influence is. The color is very unique though.

Bottle, assemblage no 114, bottled 7 Oct 2019, 6.0% ABV. Color: A bit hazy golden, thin white head. Aroma: Funky horse blanket, some tartness, hints of honey. Taste: Moderate to over moderate tartness, horse blanket funk, fruity Gooseberry and citrus notes, oak wood and light hints of the honey. Dry mouthfeel, quite a lot of tannins. Vinegar hints. Light hints of old hop in the background. Medium body, just below average carbonation. Long lasting astringent finish. Very nice.
