Héron c'est une bière spéciale pour nous. C'est la toute première qu'on ait brassée, il y a bientôt 7 ans, dans nos cuves 20L de homebrewer. Que de souvenirs!
Bien sûr, la recette a un peu changé. Au cours du temps et des brassins, on a affiné le maltage, le dry hopping et, surtout, on a rajouté nos amies les Brettanomyces ! Elles lui confèrent plus de complexité, de sécheresse et de potentiel de vieillissement.

Head gone in an eyeblink; hazy (!) ochre beer. Brettanomyces, almonds, citrus, molded citruspeel. Lots of citrussy Bretts. Sunflower seeds, orangepeel. Seem to get some wheat(slickness). Nice, mild acidity. Medium bodied, very slick to oily. Not very carbonated. Bit unsettling, if original and quite interesting - and not at all bad. One remark: a West Coast is not supposed to be hazy. Txs to Stef!

Draft at La Source, Brussels, 11th September 2025. Pours a large yellow golden. Aroma is fruity, aromatic, earthy. Taste is grainy, wood, citrus, earthy, a little dirty, not much brett, not sure about this one.

33cl bottle from Malt Attacks in Brussels.
F: thin, tan, quick gone.
C: amber, hazy.
A: citrus, brett, grapes, light sour fruity.
T: citrus, grapes, light sour fruity, bit brett, dry on the palate, soft carbonation, decent bitterness, more brett please!

Bottle. Malt Attacks Brussels. Hazed ginger gold. Slim ring and small island of off white. Nose has fruity brett. Some ginger biscuit malt. Not a great deal else really. Taste has some light malt sweetness, with an apple peel like tartness. Light to medium body. Touch of unwelcome acidity. Dry and light tart finish. Not much happening here. Maybe the brett needs to get working harder.

Clear orange beer, small aery irregular off-white head, unstable, non adhesive. Aroma: nice, all orange peel, grapefruit, lemony, citrus, funky touch, sour impression, little dirty almost, but in a good way! MF: lively carbon, medium body. Taste: lovely stuff, super fruity, juicy, nice acidity, lots of citrus fruits, good bitterness, some lemon juice. Aftertaste: hoppy, a bit acidic, lemon juice, lots of grapefruit, juicy, lovely sour and super refreshing, perfect summer beer, really liked it!

Bouteille 75cl, BB 20/08/2023, batch# P298. Partagée avec Christophe.
Couleur dorée sur léger voile orange, col fin blanc-cassé.
Arôme est délicat brett avec un effet barriqué boisé plaisant, un peu sur le vin effet Chardonnay - fruits blancs en rétro-nasal.
Palais est délicat - l'influence des bretts est marquée et apporte une bonne balance à la base IPA. Je retrouve un léger fruité blanc et à noyaux ponctué par les notes de bretts et un léger côté funk en fin de bouche. Petite sécheresse de fin de bouche.
