Triple fermented - first in the tank with Belgian yeast, second in french oak Chardonnay barrels with brettanomyces, and finally in the bottle with a third yeast for natural carbonation.

A hazed blonde wit with a thin big bubbled light white head, lost a bit of carbonation. In aroma, sweet fruity malt with light Brett notes and Epsom salts, ground cherry, light lactic notes, very nice. In mouth, a nice sweet fruity malt with Brett, light lactic notes, coriander, very nice and still solid for its age, more than 5 years old.

Pale blond with lasting head. Aroma and flavour have a slightly soapy note. Maybe coriander. Finish is woody and dry. Some cork.

Bottle, 6.5%. Citric, almost cidery aroma. Hazy pale yellow colour. Sparkling. Bretty citric note, hint of sweet fruit and vanilla from the barrels. (Too) high carbonation. Watery finish. Tastes really good, but it is more subtle than I had expected.

Bottle. Pours nearly clear pale straw with airy and small white head. Clear aroma of malt and yeast (Brett), with notes of spices and hops. Bitter, hoppy flavour with pronounced bretty notes and touches of pepper and hints of malt and coriander. Bretty and spicy afteraste. Very high carbonation. Decent stuff.

Opened at room temperature, the cork exploded out of the bottle when I was removing the cage. Not a gusher though. Pours a straw yellow, a stream of bubbles that looks very tornado like.
Wit beer spicy nose with an abundance of Brett. Coriander and clove well represented. Banana maybe even more so.
Taste wise, the base beer is intact, the Brett is strong but not overpowering. Coriander and clove, again, doing their magic. Tiny bit of citrus tartness adds to the fun. Dang, I'm enjoying this.
Barely into medium bodied, lively carbonation.
Oh, did I mention that it's very dry? Very very good.

Bottle, 650 ml, courtesy of Max. Shared with him, JFK10000 and Miro. Hazy yellow, medium white head. Funky, some wheat, citrus, lemony notes, moderate sourness. Light bodied. Medium carbonation.

Belgian witbier variation by this Alaskan brewery, aged on wine barrels and spiced with coriander but also lemon peel (rather than curaçao) and black pepper. Bomber shared at Nieuwjaarsreceptie of Gentse Biervereniging. Moussy, irregular, largely stable, egg-white head, cloudy straw blonde robe with olive greenish tinge - looking like a witbier indeed. Aroma of abbey cheese, soap, lemon peel indeed very noticeable, white grapes, sweat, yoghurt, pear juice, starfruit, coriander, some faint wood faraway in the background, hardly any pepper. Crisp, fruity onset, hinting at ripe banana, pear and white grape with something cucumber-like as well, soft carbo, rounded, fluffy and soapy mouthfeel. Bready middle with light wheat sourishness, becoming a bit 'wild' and funky in the finish, with a sweaty touch as well as mild white wine tartness; coriander and lemon peel retronasally, but again little of the black peppercorns. Some lingering, pleasantly bready yeastiness. Could perhaps improve with a bit more aging, curious to see what would come out of that, but in this form already a great beer and a creative addition to the old Belgian witbier or 'blancheke' standard.
