Originally a blend of Kapittel Pater and Kapittel Prior, now an original recipe.
From the brewery's website:
In our brewing process for the 7,5° dubbel we use extra winter malt .
This increase in malt results in a higher alcohol content, so the yeast that feeds on the sugars in the malt is given a feast of greater proportions.
By adding sugar, also known as “Belgian candy,” we can increase the activity of the yeast, and the beer gets a second fermentation in the bottle, carbonating the beer in a natural way.
This gives the beer a beautiful and large froth.
This fine Dubbel has a rich malt aroma of malt, yeast, dark fruit, & spice; flavors of sweet malt, yeast, caramel, dark fruit, raisons, and spice, with a faint touch of pleasant bitterness, and it fills up the gap between our 6° Pater and the 9° Prior

Bottle. Light unclear medium amber color with a large, frothy, good lacing, fully lasting, light beige head. Aroma is moderate malty, roasted, moderate yeasty, brown sugar. Flavor is moderate to light heavy sweet and bitter with a average to long duration. Body is medium, texture is oily, carbonation is soft. (200208)

Hazy brown with medium off white head. Sweet aroma with fruity notes and roasted malt. Flavor has roasted malt, chocolate, ripe fruits and spices. Finishes sweet.

Bottle. Nice big creamy tan head with excellent duration. Color is dark brown. Aroma is rich and fruity. Taste is fruits, malt and spices.

Bottle: Poured a murky brown with a little white head. The aroma was very sweet and veggy and spice. The taste was super sweet malt with a spicy finish.

(33 cl bottle at The Rover) Clear deep red color, fluffy tan head. Vinous, raissin and some alcohol scent. Some milk and smooth grains as well. Metallic, roasted malt and yogurt taste. Spritzy mouthfeel, low bitterness. Rather sweet aftertaste.

Bottled at Belgobaren, Stockholm. Hazy copper colour, rich creamy head. Yeasty earthy nose that softly transfroms itself to minerals, almond and melon. Sweet and very soft, near full bodied. Later on another soft transition occurs - this time to grapefruit, syrup and salt. Finally it gradialy turns into resiny pine needle bitterness. A sensationally seemless beer that weaves your mouth into a silky web full of complex flavours. Too sweet, but who cares? This is art!

330 ml bottle, as "Kapittel Watou Dubbel" (no "Het" anymore), bought in Frederikshavn, Denmark. Chestnut colour, large light tan head. Lovely caramel aroma, also hops and dark fruits, hints of sherry, spices and oak. Flavour has also caramel sweetness with lightly roasted malts and moderate oaky and spicy elements, nice. Moderate hops in the finish. A pleasant beer to drink, will appeal to people with a "sweet tooth".

Browny read with white head. Aroma and taste of sweet malts, dark fruits and spices. A bit sweet. Finish is pleasant - a bit bitter! Van ecke is quality!

Bottled. Slightly hazy, reddish-brown beer with a diminishing beige head. Rich aroma with candi-sugar, spices, dried fruits and carmell. Flavor has the same elements and some roasted notes. Lightly fizzy in the mouth. Sweet, slightly bitter finish. (060402)

Bottle. Slightly hazy ruby beer with thickish beige head. Tastes like Terry’s chocolate orange. Really nice choc and orange peel with acidic/citruic hop finish. Tad one dimensional but nice even still
