A Pale Green Horse is a Kviek IPA brewed with well water, Pale Moon malt from Blacklands, raw wheat and oats from Barton Springs Mill, and Galaxy, Citra, and Mosaic hops. It was dry hopped with Strata, Galaxy, Citra, and Mosaic hops at a rate of 3 lbs. per barrel.
We brewed A Pale Green Horse with Brandon Jones of Yazoo when he visited us for an early December Jester King SPON Day. Brandon is a fan of the Hornindal Kveik yeast strain from Omega Yeast Labs, which we used for fermentation. Although it is monoculture, the farmhouse origin of Kviek yeast just makes sense. Not to mention it ferments with flavor fit for a great Hazy IPA.

Brewed at Jester King, 7.8% ABV. Opaque dull orange with a rocky white head. Aroma of tropical fruit (mango, coconut, lychee), grass clippings, bread. Sweet and more fruity than sludgy at first then a slightly burning grass clipping finish. After a while that Sabro coconut softens things a tad. OK.

Lovely kveik IPA, offering up ample tropical and citrus notes backed up by modest veins of apple, grass, and earth. Finishes with a dry mineral bitterness and lingering grapefruit. Tasty.

Can thanks to Blake. Pours a cloudy orange with medium frothy white head and yeast floaties. The aroma is floral, wheat, citrus, grain. Slick body, citrus, pine, grain, yeast, light bitterness, very good.
