Blend 31, like the best of its predecessors, has been one of those that took its own leisurely path and time.. In June of 2016, the oldest constituent of this blend began as a batch of Arthur that had been brewed and dry-hopped solely with Cascade and was conditioned in puncheons. Joining a portion of that beer was a share of Sankt Hans that began its wine barrel aging in February of 2017; single wine barrels of Dorothy, Nordic Saison, and Leaves of Grass (brewed with sorrel), all from summer of 2017; wine barrels of Anna from autumn of 2017; and finally, a nuanced contribution of depth from a strand of Biere de Norma from 2018. Each element was chosen to complement and optimistically strengthen the final whole.

This composition was blended and bottled in May of 2018. The hopeful maturation and current stature of this blend has required nearly three years in the bottle, and we fully expect that it will continue to present exceedingly well for four to five more years. Like the blend numbered 30 before it, this, too, recalls subjective notions of Civil Disobedience 10 yet with a softer, more gentle approach. While Blend 30 remains assertive, its Buckwheat component perhaps even still too forceful, Blend 31 seems to demonstrate the delicate marriage of Arthur and Sankt Hans with the orchestral accompaniment of a varied cast of gentle characters.

Given its long conditioning time and lively effervescence, we recommend opening this at 40ºF/4ºC.

A hazy deep golden beer with a white lacing. Aroma of sour grapes, apricot, peach. Taste of sour apricot, peach, brett, super refreshing.

Op tap bij Borefts '25. Mistig, koper kleur, geen kraag. Rode wijn, eikenhout, zit nog een aardig zoetje in, redelijk zuur, licht funky, houtig, licht fruitig, zurige finish. Lichte body, vettig mondgevoel. Interessant spul, maar of ik het echt lekker vind..

From tap at Borefts 2025. Complex and wonderful. Aroma of oak, funk, citrus, lemon, grain. Medium sour, dry finish. Amazing balance.

9n tap at Borefts 2025. Hazy orange colour no head. Saison aroma. A little creamy. Some cereal some depth. Decent enough. OK saison . Very full in mouth.

Süffiger, moderat säuerlicher Beginn. Helles Malz, cremig, Trauben, hohe Süffigkeit. Spritzig, die Säure bleibt konstant, mittellanger Abgang. 10/10/10/10//10

Grapefruit and wine barrel. Some lemonbalm or something like that. Pours hazy golden with good head. A hint of butter. Light tangy finish. Among all the HF sour stuff I had today, this one is the most underwhelming. Lemon on the finish as well. Tap at Churchkey.

Quick sample at Churchkey. Really just a slurp or two. Lots of tannins.  Persimmon.  Quince.  Orange and some barrel.  Good.  Murky orange.  8 7.5 8 8 8

750mL bottled 2018, glass pour at the brewery, 9/13/23. Clear, deep bronze. Frothy, off-white head of bubbles sits on edges. Wow. Another killer CD....just a stunningly round, mellow but highly aromatic balance of mineral, fruitiness, white wine, mellow lactic and Brett acidity. Soft, soft oak and dainty, honey-like malt with a deft touch of rustic bread. Strong Brett, very leathery, with spice coming from somewhere, I wonder if it's the sorrel? Soft, well-attenuated, malty and fruity with good tartness through the middle ending earthier and with more leathery Brett and light wine. Gentle oakiness and tons of earth. Maybe doesn't live up to the nose, or is just significantly different, but still pretty flawless and interesting. Quite dry, but not too acidic.
