Blend of bittersweets: Dabinett & Chisel Jersey

Fermented with wine and saison yeasts separately and then blended. Conditioned in a vessel that facilitated the introduction of local wild yeasts and bacteria for six months then finished and matured in a white wine barrel for a further six months.

Sample, thanks to Danlo. Misty gold appearance, still. Tight dry tannins at play alongside some mild oak. Light and juicy. Old school.

Sample thanks to Danlo: Poured a golden with a white bubble head. Aroma is mushy apples, light leather. Taste is crisp apples, little acidic, zesty, leathery and tannins near finish.

4/5/2022. Bottle shared by danlo, cheers Ed! Pours almost clear golden orange with a small bubbly white head. Aroma is woody, apple core, white wine, light funky and toffee notes. Moderate sweetness, light bitterness with a tart edge. Moderate body, watery, soft carbonation. Very dry tannic finish. Good.

Panda at home, thanks to Danny Lo, 12/06/22. Almost clear golden with a decent enough white crown. Nose is bitter apple, straw, tannins, light farmyard notes, oak. Taste comprises sharp apple, tannins, light funk, herb, light acidic tickle. Medium bodied, fine carbonation, drying close. Tidy cider ... never sweet at any point.

750ml bottle from Beermoth. Orangey gold colour, afew short-lived bubbles on top and aroma of fruity apple, juicy, wood barrel. Taste is sweetish, tart and tangy, apple, orange juicy notes, with oak barrel, white wine, vanilla, some mellow funk and buttery hints. Medium bodied, low carbonation, dry slightly tart woody finish. Interesting, nicely drinkable.
