With National Curry Week approaching, we’ve teamed up with long-time collaborators and Monk team favourite, Bundobust for our latest Culinary Concept. The key to feasting Gujarati-style is balance - that interplay of hot, cold, sweet, spicy, soft and crunchy all mingling with each other in one meal, sometimes all in one bite.

With so much rich and spicy food at the table, mouthfuls of fruit chaat – fresh fruit dusted with punchy chaat massala – are eaten between scoops of dal and bites of bread and bhaji to provide welcome refreshment and contrast to emphasise the variety of savoury flavours.

We’ve recreated that in beer form, by adding Mango & Pineapple to a silky oat-forward Citra & Amarillo base to create a smooth, fruity IPA, conditioned on kashmiri chilli and salt to mimic the distinctive warming salinity of chaat massala.

Can from lowcostbeer, consumed 2 weeks past BBE. Hazy orange-gold, small white head, little retention. Mild fruity curry aroma, mango, pineapple, onion, salt, chilli. Sweet mango and pineapple dominate at first, then salt, herbs and a tingle of chilli. For such an unusual IPA its clean and balanced but surprisingly becomes a little one dimensional after a while.

3/IV/22 - on tap @ Bar Beenhouwer (Gent), BB: n/a (2022-296)

Pretty cloudy orange blond beer, small creamy yellowish head, unstable, non adhesive. Aroma: weird, sourish impression, notes of cucumber, tropical fruits, juicy. MF: ok carbon, medium body. Taste: weird, sourish start, pretty salty, cucumber, tropical fruits, mango, gentle bitterness. Aftertaste: bitter touch, salty still, weird, hint of chilli maybe, but not much.

Spotty white head on a vivid gold body. Tropical fruit aroma. Medium bodied, mouth on the tongue with a tingle on the back. Melon, tropical fruit, mango & pineapple tastes with a chilli hit in the back. This is some weird shit.

Keg @ Tap and Can. Hazed golden yellow appearance, small white head. Expected a muddled mix of ingredients, but comes across clean and easy-drinking, very light mango with a nice chilli tickle on the swallow. No salted caramel and pineapple interfering with things. Decent.

Hazy gold with a small bubbly white head and a stewed tropical fruit aroma. Well carbonated with a slightly funky orange juice vibe, and a soft bitterness, the chilli spice isn’t apparent until the aftertaste where it gives you a little tickle
