Late spring 2021, we did a series of small macerations, with the aim to further compare fruit variations and maceration intensities. For this series of Rabarber (technically not a fruit but a vegetable), we macerated different varieties of rhubarb in different intensities.

Pours unclear blonde, scent is rough, funk, an undefineable aspect, not as clear rhubarb as the Rabarber I . Taste is full, tart, i'd say less rhubarb ( at least perceived) than the Rabarber I . More complexity though, balanced acidity. Not bad at all. Lovely balance, this more in favor of complexity than intensity by the fruits.
