On the Longest Night of 2019 on December 21st - as we do every year - we experimented around the brewhouse and the coolship. Aside from the three blends featured in this Twist of Fate-series, that day we also put some sherry barrel staves directly on the coolship to macerate in the cooling lambik wort. We used that lambik in an Oude Geuze blend (season 20|21, blend n° 44).

For this Speling van het Lot, we blended a lambik that was macerated with sour cherries on the coolship during that same Longest Night. The weighted average age of the blend upon bottling is about sixteen months. More than 20% of the cereals used was sourced in the Pajottenland. 100% 3 Fonteinen brewed lambik.

Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and blends.

Aroma: a bit oxidized, some little sweetness and fruitiness, a bit of funk.
Taste: along the same lines.
Overall: good one.

Blend 47, season 20/21. Pale and a bit of purple accent to it. Okay, nice barrels, quite tart, a moderate cherry note, has a touch of sweetness, and quite buggy. Pretty good - the tartness is more than the usual 3F but the fruit character is really good.

750mL bottle, pours a hazy amber orange with a small white head. Aroma has a nice faint barnyard funk, faded cherries, and a touch of faded leather. Flavour has a nice cherry pith character, moderate funk, and a touch of gentle leather. Nice use of the cherries, solid funk character. Not their most complex product, but very well-made.

Poured from 750mL bottle (blend no 47; season 20/21; bottled 13/04/2021; bottle #0376/1229). Hazed bright amber orange with minimal white head. Nice cherry forward character, gentle funk, enjoyable.

750mL bottle. Pours murky dull orange with a white head. Nose is funky, musty old wood; notes of woody sherry. Flavour has musty old wood, some mildewy furniture, citric acidty. Great musty, funky beer. Solid stuff.

Tart cherry, funk-forward 3F. Not getting the sherry really, but lots of oak character, surprisingly soft. Some almond cherry stone note.

750mL bottled April 13, 2021, drunk November 24. 2022. Hint of haze, ruddy-amber-cranberry with no head. Sherry is noticeable with the sour cherries being austere and fully macerated (no residual sugar apparent). Heavy lactic, moderate brett, no acetic with moderate wheat blandness/nuttiness and no alcohol or flaw. Not too sour, though a heavy blanket of lactic acid sort of dampens the cherry and brett. Yeah, it's heavy lemony-yogurty-cheese rind-lactic with fully macerated, sour cherry malic character and dry sherry. Doesn't get astringent or even too sour, technically, but there's no real relief from all this dry/bitter/sour even if it's got a good, wheaty/malty texture. A bit disappointing for my first SvH, but that's just because of the insane high bar set by 3F and Cantillon; it's still a fine, drinkable, malty, dry beer.

Bottle at Lambic o Droom. Dull deep pink. Red currants, dry cherries, oak, funk, dank funk, chalky, wheat. Over medium sour, light sweet and bitter. Not that great.

Pours a mildly red-amber. Small white head. Scent is mild on cherries , loads of lambic funk. Taste is smooth, tart, very lambic-forward. Cherries are very silent, but not absent. Very decent, but not overly specific.
