Deze kers is bereid door de maceratie van jonge lambiek met verse kersen.
's Ochtends, na de pluk, werden de kersen toegevoegd.
Na maceratie onderging de kersenlambik een verdere rijping op eikenhouten vaten.
De Kordia kers is sterk aromatisch en leent zich goed als smaakdrager.
In de zoektocht naar de de geschiedenist van de Schaarbeekse kriek, vonden we een receptuur waarin kaneel gebruikt werd.

Liggend bewaren. Sediment niet verstoren bij schenken.
Ingrediënten: water, gerst, tarwe, kers, kaneel, hop
Lambik macerated on sweet cherries. Barrelaged after maceration.
When blended, small infusion of cinnamon to accent the almond and spicyness of the stones.

Beautiful clear, deep Burgundy red beer, with a fast gone pink rim. Fruitaroma's and indeed, cinnamon. Kind of male perfume, aftershave. Lactic acid, fruitacids, bit phenolid. And again cinnamon, but nowhere overwhelming. Lots of cherry - not unlike Schaarbeekse. Acidburn and -thinning, bit dry-out effect. Quite interesting (seen the wild sweet cherries, as well as the classic combination cinnamon-cherry, but not frequently done in beer) and nice.

One in this still young and growing lambic project run by a namesake of the old Eylenbosch brewery in Schepdaal – but otherwise there are no connections, business-wise or other. Using cinnamon and sweet cherries rather than the much more common sour cherries, this could be a very wintery lambic indeed. Thin and open, snow white, loose head leaving a thin membrane, hazy ruby red robe with vaguely brownish-mahogany tinge. Aroma of cherry vinegar and sour cherries rather than sweet ones, redcurrant, lemon juice, green apple, dry wood, sweat, rhubarb, cinnamon only vaguely detectable when warming up, unusual ‘minty’ notes of basil or peppermint leaf. Crisp acidic onset, very lemony, puckering with again much more a sour cherry ‘tang’ rather than sweet cherry juiciness – cherry vinegar, of the kind I had a bottle of some months ago, springs to mind again; hints of redcurrant, sorrel and crabapple, fizzy carb accentuating the sharp sourness. Drying middle, lactic and lemony effects, lots of cherry skin tannins supporting the wood over a slender cereally core; cinnamon again remains very subtle, apart from that faint and brief minty aspect which may be related to it. Ends sharply lemony to cherry-vinegary, the dryness and astringency strongly amplified by cherry skin and cherry pit tannins. I agree with some of the below comments that this one is too sharp in acidity for what it promises and does not deliver enough ‘sweet cherry’ – with even less of that warming, spicy cinnamon being noticeable; in spite of not entirely delivering on its promise, though, it still remains a well-made, well-structured and refreshing lambic with probably some interesting ageing potential for at least a year or so.

Pours rather clear pinkpurple. Small layer of white head. Scent is cherry, bright, with a heavy funk. Cinnamon providing some balance and complexity. Taste is complex, milder cherry (sweet cherry, but the beer isn't sweet ! ) cinnamon is very mild, only providing a layer of complexity. Lovely !

Cloudy bright red beer, small aery irregular white head, unstable, dissipates quickly. Aroma: spicy, some cinnamon indeed, fruity notes, cherries. MF: ok carbon, medium body. Taste: nice, fruity, sweet touch, lots of cherries, earthy profile, nice acidity. Aftertaste: more cherries, dry, a bit lemony, soft acidity, some tannins, very nice beer!
