This ultra rare beverage is a hazy, sparkling and dry Pinot Noir and Orange Muscat Piquette Pyment. We made this amazing beverage by fermenting Arizona wildflower honey on the pressed skins of California Pinot Noir and Orange Muscat grapes. Harnessing a dose of honey in each bottle, Coral Coalescence naturally refermented yielding a fine sparkling quality with exquisite tiny bubbles.

I'm pretty sure this is my first ever Piquette! Pours clear, darker amberreddish. Small white head fades instantly. Scent is very wine-like, earthy profile of grapes, very fruity, but also didn't loose the honey. Fairly intense, sweet honey funk. It blends together particularly well ! fairly intense combination as well, co2 meets the nose ( I know that sounds strange, but trust me) like a very aromatic (attypical aroma's though!) sparkling wine. interesting, and I could sniff this all night - concentrate on grapes and it's basically a wine. Concentrate on the honey, and it's basically a mead.
Taste is dry, mild on tannins. Very earthy, strawberry, raw cherrie profile. 'Aromatic ' CO2. dry, for sure not sweet, but not aggressively drying, not that tannic either. Honey profile is still recognizable, but takes a bit of a backseat compared to the grapes, as far as the flavour goes.
As sad as it is, this is not my personal preference, which is why i'm so surprised by how well I have to admit it does work.

500ml @ Matt's. Appearance: Aroma: very weird, like super chemical fermented out honey, quite disgusting for me, like dirty acetone. Taste: along the same lines, quite chemical-like products from chemical stores. Overall: not good for me at all.

500mL bottle, pours a clear dark amber with a small white head. Aroma is full of champagne-like effervescence, red wine must, and fermented out honey. Flavour is dry, funky and champagne-like, with totally fermented out honey, champagne-like notes, and plenty of barnyard funk. Dry, musty, funky, champagne-like -- more vinous than mead-like. Tasty.

Has a sort of a salmon colour. No head. Has a decent grapey note on the nose. Fruity, vinous, and there's a nice bit of floral honey accent that underlies everything. This has a vibrant body, light acidity that brings out the floral character. Light vinous character. I'm liking this.

Again with the wine focus buuuut this one is just awfully light. At least the ultra dry white wine one had some character, this one's tasty just light and feels uninspired regardless of the rare style and rare method to brew, sowwies! Again mimosa mats.
