Corpulenta y maltosa Doppelbock madurada por largos 18 meses en barricas de vino con un cultivo de levaduras salvajes (Brettanomyces). El balance final logrado, por un lado, por las complejas notas a malta aportando dulzor, potente cuerpo y alto grado alcohólico, y por el otro, por el funkiness y sutil acidez aportados por las levaduras salvajes, no hubiera sido posible sin la fundamental ayuda de nuestro fiel compañero llamado Tiempo!

Appearance: fogged chestnut brown with a one finger tall ivory-coloured head of medium retention. Aroma and taste: Caramel, toast, dried fruits, esters, a subtle brett touch, distant hop. Light sweet, sour and bitter. Mouth feel: medium body, soft carbonation. Summary: pretty unique. Good.

375ml bottle from Pivo i PenaPaki in Moscow. Pours opaque dark brown with a small off-white head. Aroma is dark bread, chocolate, faint bretts. Taste is medium sweet, dark malt, chocolate, bread. Medium bitter finish. Full bodied.

Clear dark brown beer, small creamy beige head, unstable, non adhesive. Aroma: malty, chocolate, good roast, lots of coffee, sweet impression, caramel. MF: ok carbon, medium body. Taste: very sweet start, sugary, lots of caramel, fruity, dried fruits, alcohol, a little bitter, ok. Aftertaste: more roast, soft acidity, dried fruits.

Sample during Leuven Innovation '22, shared with Tderoeck and Untappd duo.
Brune foncée quasi noire, col fin blanc-cassé.
Arôme présente des effluves marquées de malt chocolaté, plus RIS que Doppelbock, rétro par après va vers un côté levure allemande, avec un apport de fruits secs et noirs.
Palais est épais, marqué par un apport intéressant d'acidité pour ce côté sourish qui tranche bien avec la masse des 13%. Je retrouve pas mal de fruits noir - baies genre mûres, cassis avec un subtile caractère allemand en retrait - le tout reste assez massif, léger effet sucre résiduel sur la fin pour un léger collant aux lèvres et ce malgré le côte 'sour'.
