Back in Feb 2020 we brewed four of the largest mashes ever at Galway Bay to collect one full tank of super-high gravity wort. This all-malt 33 Plato stout Is the biggest beer we’ve made to date. Lagered in a steel tank for 1 year before aging in Bourbon & Rum barrels for an additional 9 months. This decadent stout oozes chocolate, cocoa & finished with a kiss of salted caramel. Bottled December 2021. Drink fresh or age cold.

Dark tan head over pitch-black beer. Liquorice, roast, sweet breadcrust, and slightly perfumey, mint. Sweet dark roast, something of eggnog, sweet. Finish is molasses with alcohol-drenched wood, rum. Parsley. Very oily feel, chewy, alcoholburn. For a sweet stout, quite OK.

Rated at Penthouse Platinum Lounge - Pien Edition. Dry, roasty and and heavy with licorice, earthiness and bitterness, hints of stingy wood and oak. Heavy.

Cellared this one for awhile and finally cracked it open on St. Stephen's Day. Pours as expected, oily and syrupy black with a minimal off white head. Nose is whiskey, oak, brown sugar, Christmas cake. Flavour is the same with a little boozy note. Took my time with this and it opened up a bit after about 30 minutes, but was a bit of a chore in the end to get through it.

Tasting, opaque black, alcohol, barrel, whiskey, caramel, burned hint, vanila, wax, quite sweet but not too much. Good and interesting, but too messy.

Sample (thanks fonefan!). Black colour, small brown head. Aroma is mildly toffeeish, some liquorice, alcohol and some slight nutty and bitter espresso tones. Flavour is following pretty much the same pattern as the aroma.

Pours black, no real head. Scent is roasty, chocolate, full , aged chocolate. Taste is full, chocolate, high acidity, oaky and full-on barrel profile. Slick, bit boozy. Not overly great to me.

50cl Fles van AceDrinks. Zwarte kleur, beige-bruine kraag. Chocolade, brownie, pure chocolade, rum en bourbon duidelijk aanwezig, rozijnen, caramel, wat koffie, vanille, alcohol, heerlijk rijk en vol van smaak, wel wat scherp aan de randjes. Volle body. Top.

50 cl bottle @ hotel room, Dublin. Batch #819, BBE 22.11.2023 Aroma has licorice, alcohol and molasses. Flavour has bourbon, licorice, alcohol, some vanilla. A bit too sweet and strong on alcohol – on the other hand it is rather throatwarming. Drinkability could be better. Somewhat typical heavy Bourbon-IS.
