A blend from Tom's own Home Orchard, of mid season cider apples. Picked in October 2020 & then fermented & aged in an old whisky barrel from Scotland. Named in recognition of Canadian broadcast legend Rosalie Trombley, a trailblazer for women in the music industry, who was immortalised by Bob Seger in his 1973 single “Rosalie”.

Bottle. Oliver’s. Clear pale gold. No head. Nose has fresh manure. Light whisky notes. Sour apple. Peculiar, to say the least. Taste is tart, dry, acetic. Palate is a little flabby. Low carbonation. Acetic fairly sharp finish. Dunno if this is as intended but it’s doing nothing for me.

14/9/2022. Bottle shared by danlo, cheers Ed! Pours clear bright golden with a small bubbly white head. Aroma is woody, whiskey, vanilla, light funky notes. Light sweetness, medium tartness. Moderate body, slightly oily, low carbonation. Dry, tart, astringent finish. Enjoyable.

Panda 🐼 at home thanks to Danlo. A clear golden yellow coloured pour with a small halo of white head. Aroma is green apple, mouldy funk, waxy bark, vanilla. Flavour is composed of tart green apple, tannin, bark , tannin, bark , woody apple pips, wax, dry pithy citrus, bark, bruised apple. Palate is semi sweet, tart, pithy, woody bark, mouldy fuunk, tart finish.

Panda at home, thanks to Danlo, 12/06/22. Clear mid golden with a modest white cap that soon dissipates. Nose is bitter apple, light smoke, damp oak, straw, herb, scotch nip. Taste comprises caramelised apples, tannins, hay bale, oak, modest whisky strains, apple skins. Medium bodied, fine carbonation, drying close. Solid stuff.

750ml bottle from Fine Cider Co. Golden colour, some short-lived bubbles on top and aroma of woody oak, vanilla, apple, whisky barrel. Taste is tangy, tart, apple, fruity, with wood, vanilla, oak barrel, some butter hints, funk, citric, and drying tannins. Medium bodied, low carbonation, dry tannic finish. Nicely drinkable.
