We’ve employed various techniques to use wine grapes in this wild ale. From long-term maceration of the beer on the grapes, to adding our spontaneously fermented wine. This, together with the fact that we’ve never used this much wine grapes in a beer (approximately 625 grams per liter), results in a very wine-like beer with a lot of different layers in taste and aroma.

Sampled at Brewver Belgian Winter Gathering. Unclear yellow pinkish color, small white head. Smell and taste red fruit, grapes, softly sourish with tart notes. Pretty good.

75cl Bottle @ Belgian Beer Geeks Winter Gathering. Pours a misty pink, white head. Fantastic crisp red berry sour, fresh red berry and grape coming through well on the nose, grape must and skins accompany rounded funk, tart and crisp with modest woody moments. Nicely done.

Very cloudy purple beer, small creamy irregular off-white head, unstable, non adhesive. Aroma: fruity, very funky, a bit weird, some vinegar. MF: ok carbon, medium body. Taste: bitter earthy start, funky, gentle acidity, metallic touch. Aftertaste: more bitterness, earthy, dry, funky, metallic still.

Poured from bottle @ MBCC 2023 blue session (finally adding my notes). Dreg pour. Nice vinous notes, backend has gentle funk, quite nice.

Sour ale jam packed with grapes (625 g/l) and, on top of that, blended with natural wine of own produce – the most grape-forward Tommie Sjef product to date. Thanks Bart A. for sharing. Greyish pale beige, moussey, regular, quite dense, slowly dissipating head; initially clear, pure and warm ruddy-amber coloured robe, quickly shifting to a cloudy brownish burgundy and eventually becoming all milky (almost chocolate milk-like) with lots of gritty grape bits on the bottom – frankly I have never seen the looks of a beer evolve so radically from the beginning of one single bottle to the end. Complex aroma of grape skin, lots of vanillin-exuding oak wood, red wine must, lemon juice, red plums, rosehip, orange peel, Japanese sencha tea, damp earth and damp tea leaves especially in the end. Tart, fruity onset, filled to the brim with grapey juiciness, also hinting at red plum, gooseberry and red apple, medium carbonated; deep yoghurty lactic tartness piercing through it all, drying but remaining lively and fruity, with lots of minerality accompanying it. Bready ‘heart’ complemented with lots of wine must, grape skin and grape seed tannins as well as woodiness and rosy, floral, herbal effects; as the bottle is emptied further, earthy yeastiness becomes increasingly more pronounced, as do these herbal flavours and grape skin tannins. A lot goes on here, in a very fascinating and entertaining way – so that the gritty, eventually completely murky looks, which are anything but appealing, are easily forgiven. Quite a bold and daring grape ale of sorts, with certain ‘oud bruin’-like features.

Bottle. Murky purple. Sour wheat, indeed a lot of grapes, soft funk, oak, balsamico, strawberries. Medium sourz light sweet. Solid medium bodied. Nice beer, bit looks really weird.

MBCC 2023. Cloudy red amber with a small white head. Funky aroma with berries and especially grapes. Dry and tart fruity flavour with wood and obvious wine notes.

Bottle pour at MBCC 2023, pours an opaque murky pinky purple with a small white head. Aroma brings out musty grape skins and light funk. Flavour is murky and earthy, with musty grape skins and some wild yeast. A bit murky and muddled but not bad.

Taster during MBCC 2023 Friday morning session shared with Ryan, Matt, Phill, Erik, and Brian. Nice grapes and funk. Smooth, a bit dry. Good.
