Saison beer style is well known in Belgium where it was brewed in early spring to be consumed during the warm summer days. This beer style benefits from special saison yeast that ferments beer in higher temperatures, this way creating an interesting pepper and clove like aroma profile.
We have decided to push things a bit further by finding a compelling spice that might get along with this beer profile - we added locally sourced horseradish.
In order to extract some horseradish taste without too much pungency we added some store bought horseradish to the whirlpool, but the best we saved for later. We managed to find a real horseradish root on our own land. We made a puree out of it and added it to the secondary fermentation.
Horseradish aroma goes along with the peppery aroma from the yeast and pushes trough as a spicy note in the aftertaste.

Collab of Dok with a traditional Lithuanian farmhouse brewery – a largely unknown beer world Dok’s head brewer Janos has ventured in several times in the past already – flavoured with horseradish, a flavour I am all too familiar with as I basically grew up with these plants (and their roots) in my grandmother’s garden. Snow white, thin and open, loosely structured head, misty warm ‘old golden’ robe with apricot tinge. Aroma of Belgian pickles or English piccalilli (very strongly so and no doubt coming from that horseradish), crisps with pickles flavour, French fries (with piccalilli), horseradish paste as such too, green apple, curry soup, unripe pear, white bread. Crisp onset, sweetish pineapple and pear notes with clear sourish undertone (green apple), medium carbonated with smooth, rather oily body; cereally pale maltiness, a tad sweetish but countered by that sourish undertone and pronounced spicy horseradish which again shouts ‘Belgian pickles’ retronasally. Some floral hops ensue, but actual bitterness remains altogether soft for the intended genre. I do not recall ever having had a horseradish beer so an interesting one it is – but I was not expecting a Belgian pickles aroma to dominate… This will not be for everyone, I think, and I personally would have preferred a bit more hops for bitterness in the finish. Still an original and fascinating beer, though.

On tap at DOK brewing Gent. Slight haze deep gold colour lasting white. Some funky saison aroma. Mild saison flavour with some very light horseradish. I would have liked it to be more fierce. some hear on the finish more horseradish please. yes perfectly fine. a light funk and the heat on the finish is good.

Draught, taster. @Dok Brewing, Gent (Belgium). 04/09/2022 [#5.351 Global - #2 Lithuania - #2 Sakiškių alus] Pours pale yellow with a white head. Aroma: spiced floral malts, light earthy hops. Taste: earthy hops and lot of clove. Long spiced peppery finish. Next one please!

Clear golden, thinning, white head. Aroma of unripe pear, apple peel, wheat, green banana, wet pepper, clove, herbs, vague chamomile. Taste has sweetish unripe pear, peach & apple in a bread-malty, yeasty body along spicy & herbal notes. Grassy & peppery hoppy finish (the horseradish I presume), lingering unripe fruit, clove & spices. Medium body, slick texture, average carbonation. Okay Saison, expected it to be more intense (even though I don't like horseradish!).

Clear light yellow beer, small creamy white head, stable, adhesive, leaving a nice lacing in the glass. Aroma: oh yes, that’s horseradish all right! Very earthy, smells a lot like beetroot as well, actually! MF: ok carbon, medium body. Taste: oh yes, very spicy, lots of horseradish, earthy, nice, a bit much maybe? Aftertaste: more earthy, horseradish everywhere now, well, at least this beer delivers what it promises to be! :-p I guess that second addition of actual (raw?) horseradish was a bit much...
