Wild Sour Ale da 6,3%, frutto di un blend di diverse birre, tutte maturate 12 mesi in botti di rovere con lieviti indigeni, al quale sono state aggiunte 350 kg di Visciole provenienti dai monti Lepini. La frutta, lasciata intera, ha macerato nella birra per più di 3 mesi donandole un meraviglioso colore rubino. Successivamente i fusti e le bottiglie prodotte, sono state lasciate 3 mesi a riposare per permetterne la rifermentazione e la corretta amalgama dei sapori.

Bottle at astral beers. Pours a deep ruby red. Aroma is rich, sweet, lots of sour cherries, wood. Medium body. Flavour is rich and complex, sweet and sour. Lots of sour cherries, quite acidic, and lots of oak, with wood and some vanilla. Very intense and quite acidic, with a lovely complexity and showcasing cherries and wood.

Bottle at a tasting at a Yana tasting at Max's place. Cloudy pale red. Cherries, funk, lacto, oak, very sour, sharp, a bit lemony.

Draft @ La Tana.
Rosé, col fin blanc, peu tenace.
Arôme est fin fruité de cerise avec une acidité qui se ressent assez bien au nez. Le volet cerise apporte une certaine complexité sans vraiment jamais se démarquer.
Palais sur une effervescence haute fort marqué, effet cerise pressée, le tout sur une acidité tout autant présente. Fini râpeux avec un léger fleuri en fin de bouche - le tout oscille sur un caractère de peau de cerise, cerise noire.
