As you all know, we are celebrating the 20th anniversary of Zinnebir with three specials collabs. Each time we join forces with a brewery that played a significant role in our history. The concept is simple: we rework the recipe of Zinnebir, while adding a little touch that represents the personality of our guest-brewery.
For this second collab, we visited French-Flanders and our friend Daniel Thiriez (to be honest, it was he who actually came to Brussels). We chose Brasserie Thiriez for the same reason as we chose De Ranke. Between 2007 and 2010, Daniel allowed us to use his installations during our gypsy brewing years.
This time we used a different set of hops to brew the recipe: Daniel selected 100% French hops, cultivated by a cooperative called Comptoir Agricole.
The character of Zinnebir was well respected. However, her bitterness is a bit more rustic and she has a different kind of fruitiness. We detect some physalis and different floral, herbal and spicy notes.

Pretty cloudy yellow blond beer, big creamy white head, stable, adhesive, leaving a nice lacing in the glass. Aroma: a bit malty, very hoppy, grassy, chlorophyll, a little fruity, citrus notes, slightly floral, some pears, nice! MF: ok carbon, medium body. Taste: bitter start, very bitter! Grassy notes, a bit resinous, hoppy, medicinal almost. Aftertaste: very bitter, a bit grassy, fruity touch, a bit yeasty, more hops, grassy, very bitter finish. Wow, they didn’t hold back on the bitter hops in this one!

Medium just off-white head over veiled orange beer. Nose both creamy and metallic. Yeast and greeen herbs, mustardseed, green banana. Bitter, again metallic & vegetable. Again dry spices as mustardseed or ground horseradish. Dry finish, spiciness lingering on. At best medium bodied, creamy (the head), very well-carbonated. A robust, raw, yet rather pleasing beer. Furthermore, and with all due respect, I urge Bernard and Yves to go to Delhaize, purchase a tray of physalis and taste again.

330 ml, bottled 12 Aug 22. Golden, moderate hazy body, with a big, frothy, lacing, white head. Aroma of grass, flowers, herbs, hay, pine, citrus, dough. Tastes pretty similar. Medium, slightly creamy mouthfeel, with a lively carbonation. Finishes bitter, dry, floral, herbal, citric, a bit yeasty, with long-lasting pine. Very crisp, bitter and dry, with lovely rustic notes and just enough malt body and yeastiness. Refreshing, characterful stuff. Score: 8 / 4 / 8 / 4 / 15

33cl Bottle @ Find your own beats. Pours hazy Golden yellow with a large stable Thick White foam. Grassy and doughy nose and flavor. Sharp, bitter and crisp. Super smooth. Long bitter finish.

Light hazy blond colour, white foam. Dry, yeasty and a bit herbal. Grassy, notes of hay. Medium carbonation. Bone dry, nice!

Pours unclear blonde. Medium white head. Scent is sharp, mild malty, fresh, inviting. Taste is bitter, fresh, bit be yeast, strong herbal hoppy character, very raw and green, but in a balanced, positive way. Ends just a touch fruity. Very refreshing, easy drinker.

Draft @ ZinneFest.
Dorée au col blanc crémeux bien tenace.
Arôme au bouquet délicat, frais fleuri, feuille de camomille, malts pils et pâle en rétro-nasal avec un léger effet céréales. Le tout garde encore une base de DLS au niveau levure, le changement se joue avec les houblons.

Palais est malté assez frais, malt pils et pâle, fleuri noble presque avec une note de feuille de thé et un petit ajout rappelant le pot-pourri voire encore la feuille de figuier. Petite note épicée perce en retrait avec un fruité subtile sur la prune.
