At Goose Island, we believe ideas and inspiration can come from anyone in the Goose family, and our Biscotti Stout is a perfect example that came from our very own HR team. Inspired by the Italian desserts of her childhood, Jill Cerone, People Manager at Goose Island, dreamed up this variant after grabbing a box of chocolate-dipped biscotti from her cabinet. Working with the brewing team, Jill brought the flavor to life with notes of anise, marzipan, cocoa, and buttered toffee. The biscotti enhances flavors already found in our Bourbon County Stout and adds strong notes of nostalgia from your Italian grandma’s kitchen. One sip and you’ll be reminded of pizzelle cookies, Easter Pane di Pasqua and, of course, almond biscotti.

Hazy black, thin, beige head. Fennel, aniseed, liquorice root, chocolate sauce, dried fuge, salmiak. Sweetish fig & date; salty salmiak, spicy liquorice, sweet-salty fennel in a dark-chocolatey malt body. Peppery hops, lingering salty-umami salmiak, liquorice and chocolate, warming bourbon alcohol. Full body, creamy texture, average carbonation. Way too much fennel & aniseed here, distracting a bit from the main profile rather than adding value to it.

Almost black beer, no head. Aroma of toffee, caramel, strong dark malt, chocolate. Taste of massive bourbon, toffee, vanilla, sweet chocolate, creamy mouthfeel. Very good.

Draft at the Stadjbrouwhuis, Leiden. Poured almost black in colour with a thin broken tan head. The aroma is roasty, cacao, chocolate, light aromatic. The flavour is moderate liquorice bitter, with a big, roasty, chocolate, bready, biscotti, warm boozy alcohol bitter palate. Full bodied with flat carbonation.

0,5l bottle at home. Vintage 2022. BB 19.08.2024. black color, small coffee colored head. smells spices, vanilla, almonds, cassia, marzipan, bitter chocolate. very nice smell. full body light carbonation. tastes spices, vanilla, almonds, anise, marzipan, nutty. finishes lightly sweet with notes of spices, anise and marzipan. I very much like this, big notes of spices / marzipan / anise. not overly complex, but rather unique flavours, a tad artifical by the strong combination of anise and marzipan.

Dark brown almost black with no head. Aroma is chocolate and anise-licorice. Taste was the same. Not crazy about a licorice flavored beer.

Bottle thanks to Kyle! Pours near black with a brown head that dissipates quickly to the edges. Aroma has chocolate and almond with a good amount of bourbon and a hint of anise coming through. Flavor has dark grains and chocolate up front with growing notes of almond, anise and bourbon.

Bottle: Poured a pitch-black color stout with a dark brown foamy head with some retention and some lacing notes. Aroma of deep rich chocolate notes with some cocoa, almond and anises and with some strong woody bourbon notes with traces of vanilla. Taste is also a mix of deep rich chocolate notes with coca, almond and light anis plus some woody bourbon notes, light charred notes with a semi-sweet finish and notes of vanilla. Body is above average with creamy/oily texture and good carbonation with some discernible alcohol notes. Solid classic BA stout with great level of complexity.
