This still cider is made using the same apples (Yarlington Mill, Dabinett, Browns, Kingston Black, Chisel Jersey and Bramley) as go into their famous bottle fermented 'cousins', but only undergoing the single fermentation. Wild yeasts are used for the fermentation. The resulting cider is complex and develops well within the glass, and is excellent with food – especially cured meats and cheeses. The cider is a bright straw colour, with a fresh, clean, spicy floral aroma and a long, clean, full, crisp flavour.

(Cask at Craft Beer Co Covent Garden, London, 1 June 2025) Golden colour, slightly hazy, with brief head. Fruity nose with green apples, apple skin, citrus and yeast. Fruity, tart taste with notes of green apples, apple skin, a touch of vinegar and generous tannins in a harsh, dry and tart finish. Medium body, dry. Bone dry with a generous acidity. Quite nice.

500ml bottle shared with Soph by the river. Clear golden orange appearance. Definitely gives dry first impressions with a marginally rough barky woody side, nice natural juice with soft tannins rounding things off. Very nice.

6/12/2002. Bottle shared by Colin, cheers. Pours clear amber bronze with no head. Aroma is woody, apple, lightly funky, straw and stable. Moderate sweetness, tartness and body. Slightly watery. still. Very dry, tannic and woody finish.

Sample courtesy of Theydon_Bois, cheers Colin! Coppery amber gold colour, afew short-lived bubbles on top and aroma of apple, farmyard funk, straw, woody. Taste is tangy, tart, apple, fleshy, some core, with barnard funk and leathery drying tannins. Medium bodied, low carbonation, funky dry tannic finish. Nicely drinkable.

Bottle at home, from Elston & Son online, 25/09/22. Clear golden copper with a thin white cap formed of bubbles that veer edgewards. Nose is crisp apple, light barnyard notes, straw, orchard wood, tannins. Taste comprises apple core, light acidic whisper, caramel notes, vinous trace, tannins, barnyard, light funk. Medium bodied, no carbonation, drying close. Tidy stuff.
