Sparkling Medium Sweet Keeved Cider
This keeved cider rests on the shoulders of older trees (at least 30 years) in grazed or mown Herefordshire orchards. Tom trusts the fruit is the best for keeving, which is a technique to produce slower fermenting and potentially naturally sweet ciders. The varietals are mixed cider apples but Sheep's Nose, Yarlington Mill, Michelin, Dabinett are key.
Rich in apple sugars and a tannic backbone, with just enough acidity, to keep this very fruity tasting. Full mouthfeel but wonderfully clean and moreish.

Bottle from the Courtyard Dairy as part of their virtual cheese and cider tasting. Pale gold with a pleasant light to moderate fizz. Full-bodied and sweet to start with. Baked apples with sultanas. A light tannic hint and then creamy vanilla. Just a hint of dryness in the aftertaste. Very tasty, and stays just the right side of getting too sweet - in fact it's far more more-ish than sweet ciders normally are. All three of us enjoyed this one.

Panda 🐼 at home thanks to Colin. A clear mid gold orange coloured pour with a disappating loose white head. Aroma i s semi sweet, clean juicy apple, golden delicious, golden sugars, crisp edge. Flavour is composed of lovely semi sweet, and crisp, clean apple, golden sugars, crisp, fizzy apples, crisp finish. Palate is semi sweet, crisp, fine bubbles, lovely stuff.

5/10/2022. Bottle shared by danlo, cheers Ed! Pours clear pale golden with minimal head. Aroma is baked, sugary, caramel, juicy apple. Medium sweetness, quite tangy, light tartness. Medium body, oily, soft carbonation. Very nice.

Bottle at home, on the Courtyard Dairy cheese and cider tasting, paired with St James and then Darling Blue, 01/01/22. Clear golden to light copper with a fast collaping white cap. Nose is sweet apple, sugars, caramel, orchard juice. Taste comprises crisp apple, sweet notes but well balanced, sugars, caramel, light tannins. Medium to light bodied, fine carbonation, semi drying close with a bitter sweet edge. Top drawer for the meagre ABV.

750ml bottle from Fine Cider Co. Clear bright golden colour, short-lived fizzy white foam head and aroma of apple, fleshy, caramel, funk hint. Taste is sweet, apple fruity, juicy, with syrupy notes, caramel hint, and alittle funk & tannins. Medium bodied, light carbonation, sweet appley finish. Quite drinkable.
