There are few beer drinking experiences that approach perfection like the one possible at Mahrs Bräu in Bamberg, Germany. Order half-litres of "aU" beer from its historic schenke, repose in its picturesque beer garden and have a drink: you're bound to be enamoured by one of the world's most satisfying lagers. It is with these memories in mind that we brewed Ikinuki \ 息抜き (meaning: to breathe), Godspeed's interpretation of a Bamberger Ungespundetes Kellerbier. It pours a dazzling unfiltered golden-bronze colour with a dense, billowy white cap of foam. Our kellerbier underscores a pleasant depth of malt, with notes of fresh toasted bread crust and toffee that washes across the palate like a smooth blanket. Noble hops add a fair degree of bitterness and floral character to the beer before it finishes with a faint whisper of smoke— this is a nod to the epicentre of beechwood smoked lager after all...

Can from the brewery, bronze pour, with a small off white head. Aroma is big, and earthy, full of wet hay, and malted grains. Perfect mouth feel, soft carb. Finish is medium bitter, grassy, and earthy, loads of cereals, and light floral hops.

Dark gold colour, antique. Aroma of malt, bread, but also paper and vomit. Dry mouthfeel, crisp; biscuty malts, a bit grassy, with balanced bitterness.
Good, but it tastes like the beer from somebody who's trying hard to brew German beers.

12oz @ Ryan's (thx for the beer, man!) shared with Alex after 11h non-stop working day. Appearance: hazy copper with a white head. Aroma: raw water, hops, some caramel notes. Taste: along the same lines. Overall: meh.

Godspeed Ikinuki 4.9% Ungespundetes Kellerbier Lovely honey Amber gold in color with dense beige foam that leaves loads of soapy lacing behind. The aroma is honeyed malts with a touch of floral hoppiness. It has a soft medium body with a semi-dry finish. The taste is lightly smoky with balancing sweet malts and the floral hop notes are joined by some herbal ones. Really damn good stuff.

Copper with a white head. Toasted malts, lightly sweet, and very fain smoke in the aroma. Similar flavor profile but the smoke becomes much more noticeable but not overwhelming. Medium bodied. Soft with a light bitter finish. Smoke lingers. Nice brew.

Can. Lovely nose, light smoke, light caramel, rich, bready malt, dark bread, herbal hops, touch of orange. Slightly hazy, deep amber-orange, low, thick head. bready flavor, again light smoke, much less than a rauchbier but it's definitely there, dry caramel, toast, hazelnuts. Body is crisp and somewhat light, maybe slightly missing the yeasty thickness usual in this style. Finish is spicy and bitter, dry, well hopped. This is very good. I think most Franconian Keller biers are slightly less attenuated, sweeter, and fuller in body, but this comes across as something like a hybrid between a Kellerbier and a Rauchbier a la Spezial Rauch Lager (not Marzen).

Re-rate: Poured from 355mL can (thanks Nico). Clear light amber with small white head. Feint smoke, some earthy cereal malt, hint of bitter hopping on the finish. Quite nice. Nov 09, 2022 (7/4/7/4/15=3.7): Poured from the tap @ Godspeed. Clear copper brown with foamy white head. Soft toasted earthy cereal malt, lightly bready, touch of grass hops. Very good.

(can) hazy, bright orange amber colour with a medium tall, cream colored head; aroma of grain, then honey; rich, balanced flavour with a long, medium bitter finish
