【名前の由来】
時代とともに多様に変化するIPA。どの時代にも流行や既成観念にとらわれず、真のIPAを求めて果敢に新しい試みをする変革者達がいた。第一弾は本場英国のイングリッシュIPA。すべてはここから始まったと言っても過言ではない。

いよいよ新IPAシリーズ「６人の変革者」が始まりました。世界中のIPAファンを唸らせた往年のIPAが続々と出てきますので１年間お付き合いよろしく！

第一弾は本場英国のイングリッシュIPA「創始者」。まさに、すべてはここから始まったと言っても過言ではありません。ご存知の方も多いと思いますが、IPAは1800年代の英国で生まれました。

この創始者では、当時の味を再現するため、下の３つの点を意識して取り組みました。まず、現存する資料によると焙煎による麦芽への火入れを最小限にし、かなり淡い色味に仕上げていたそうです。そして、２つ目は、ホップの量。現代の標準になっているような量ではなく、大量に、それも苦味を第一に考えられたレシピが多かったそうです。３つ目は、英国内でも特にエールビールの源流といえる銘醸地バートンの水が、ミネラル分や酸を豊かに含み、ホップのフレーバーや苦味に極めてうまく働くという点です。

私たちがこのシリーズを通して突き進むゴールは、100％に近い当時の味の再現することではないのですが、今はなき（遭遇することが稀になった）かつてのIPAを調べ、それに取り組んだ醸造家に想いを馳せながら、ビールを造るというのは大変楽しいことです。

While the modern IPA that the world has fallen for undoubtedly began in America, it was in England that the style was originally created

We are excited to announce the first release in our 6 Innovators series which traces the IPAs that have defined the style since its inception. With the style originating in the UK in the 1800s, it only made since that our first installment is an English IPA.

We incorporated three aspects of the beers that gave birth to the style in this brew. First, old brewing records show that these beers were quite light in color, using malt that was kilned as little as possible. Second, these hops were intensely bitter, with a much higher amount of hops per liter than what is considered standard today. Finally, the water in Burton, England, has an incredibly high sulfate content, which accentuates hop flavor and bitterness.

Our goal wasn't to recreate old recipes with 100% accuracy, but it was fun to research what they were like. We hope you enjoy this taste of IPAs beginnings!
