We have now reached beer number 80, which seemed like a good time to refer back to that very first beer from the 1980s. So, just like Zatte Tripel, it had to be a good one. For this we asked our brewer Fred de Bruijne. After all, he is a great lover of tripels and other blond, full-bodied beers and often experiments in that direction. ‘Really up my alley,’ says Fred.

For our number 80 in the line of special numbers, Fred decided to turn up the spiciness that characterizes many tripels a bit more strongly. To that end, he used a different yeast for the occasion. He ordered special abbey yeast for it in Belgium.

To further accentuate that spiciness, Fred opened his kitchen drawer. As with more tripels, he added coriander for some spicy freshness. Cardamom went into the tanks (‘not too much, it’ll get sour’) to lift the spiciness, cumin and juniper. ‘Those provide a slightly spicy bite.’

All those flavors lean on a solid malt base. In addition to the usual barley malt, Fred added a few other grains. The wheat gives it a softer flavor and a slight acidity, the oats make it a touch creamier and the rye puts some extra spiciness in it

33cl Fles van De Bierkoning. Iets mistig gouden kleur, witte kraag. Cardamom, gember, grassig, vrij scherp, zoet-kruidig en bitter. Medium body, weinig koolzuur. Prima, kruiden zijn niet in overdaad aanwezig.

Fles 33cl thuis. Fruitig, kruidig, yeasty, wat gember, redelijk zacht, redelijk zoet, hop (Saaz), haver, koriander. (21-7-2023).

Bottle 33cl. @home poured into a chalice. Somewhat unclear deep golden colden colour, small frothy white head, mostly diminishing with some yeast islets remaining, light lacing. Aroma sweet malts, grain, yeast, light peach, light lemon, honey, ginger, coriander, cardamom, light cloves. Taste medium sweet and bitter, malty, light lemon, ginger, coriander, cardamom, yeast. Medium body, oily texture, soft carbonation, spicy sweetbitter aftertaste, some alcohol, peppery notes, very nice spicy tripel.

0.33 l bottle from 'Het Biermoment', best before August 2023. Almost clear, golden with a thin, frothy, slowly diminishing, white head. Sweetish, slightly malty, quite herbal-spicy aroma of honey, juniper, coriander, vanilla, some banana and light clove. Gently sweet, moderately bitter, malty, quite herbal-spicy and slightly fruity taste of banana, vanilla, honey, quite some juniper, coriander, sage, clove and light bergamot, followed by a medium long, gently bitter, peppery finish. Medium to full body, smooth and gently effervescent mouthfeel, average carbonation. Quite refreshing for a Tripel, really like the spices in here. Wouldn't say it's unbalanced but you need to like spiced beers for sure.
